No-Bake Granola Bars

I used this recipe as a base to imitate some store-brand granola bars that I love. I left out the chocolate chips and peanut butter, and added cranberries and almonds instead. They tasted delicious, but were really stretchy and gooey. They would have been perfect if they had set a little firmer.

Monica's Vegetable and Seitan Stew

This recipe is easy, tasty, and healthy. I recommend adding at least two cloves of minced fresh garlic in order to give the soup a little more flavor.

West African Peanut Soup

The flavor of this soup is wonderful. However, I think the cooking time was way too long - the finely chopped vegetables turned into mush before the rice was cooked. I would recommend coarsely chopping the veggies and cooking them until they're just tender, then adding pre-cooked rice.

Beans and Greens

This was okay, but not one of my favorites. The broth consists mostly of the water and salt out of the canned beans. It was pretty salty, but didn't have enough other flavors. I would recommend rinsing and draining the beans, then making your own broth by adding curry or other spices. To me, this recipe has way too much of a "straight out of the can" taste to it.

Bulgur Chickpea Salad

The base recipe has a few problems, but you can modify it to make it delicious. Use half, or less, the amount of oil. I added salt, curry and powdered ginger, and it was wonderful. The recipe is also wonderful with quinoa instead of bulghur, although that's not a necessity.

Pineapple Fried Rice

Folks, you should really review the base recipe, not the recipe after you've made lots of tasty modifications to it. ;-) The base recipe is very bland, but it's perfect to get started with - adding fresh garlic and ginger is a must. I'd also recommend adding a splash or two of rice vinegar.

Strawberry Muffins

Thses turned out perfectly - very pretty and delicious! I followed the recipe exactly, but am transitioning to veganism, so I used Ener-G brand egg replacer and soymilk. So, other vegans/strict vegetarians out there, don't be afraid to try this one!

Black Bean and Salsa Soup

This was a wonderful recipe. It was extremely simple to make, and tasted delicious. I didn't have any plain cumin, so I used curry powder instead, and the turnout was great.
