Chickpea Salad

I picked this recipe because I wanted something easy for some chic peas that I cooked the day before. I agree, I would never use this much vinegar. I sprinkled with extra virgin Olive oil and about 2 tablespoons of rice vinegar. I prefer the mild taste. I added some pepper, a little oregano and garlic powder, a little Italian twist never hurt anyone. WaLa...My husband loved it.

Split Pea Soup with no bone

Could not find a boneless split pea soup anywhere. I came up with this version and what I love about it is that there is no fat floating in the soup. Much more healthy.

Aunt Carol's Spinach and Fish Bake

I also use fresh spinach with an Italian twist. I saute fresh garlic with extra virgin olive oil just for a few seconds to bring out the favor. I add a full bag of fresh prewashed baby spinach all at once and pour in about 1/2 cup or so of white wine, the best to cook with is Sauvignon Blanc. Once the spinach is wilted, I continue with the receipt and found that 350 degrees is much better. I make this at least twice a month and have passed it along to friends.

Fish Tacos

It was right on the money. First time made it and every time. My husband is crazy for this. We were in San Diego and there is a 2nd floor restaurant facing the ocean that claims to have the best fish tacos in San Diego. They do and this recipe captured it!!!!!

Rice Casserole

I needed something quick for a pot luck and had everything in the house. I never use white rice, I mix brown rice with equal amounts of wild rice for a nice texture and flavor. Everyone's reviews were great and I rely on this a lot. I added half pepper jack and half cheddar, and sprinkled some garlic powder, used the whole can of drained corn and a good cup of chopped green onions. It is delicious even cold before I baked. Will make this again especially for a crowd.

CRUSTLESS COCONUT CUSTARD PIE

What could be easier during the holidays or anytime you want a knock out dessert and little effort. It's 10 seconds in the blender, stir in the coconut and pour into a buttered pie pan.

Cake Mix Cookies IV

Not a big cookie person but this the best. Read all the reviews before starting and used 1/3 cup oil as suggested, added teaspoon of lemon extract. Used parchment paper and dropped by teaspoons on paper then sprinkled with cinnamon and sugar combo. Brought to church and were gone in a flash. Will make again and again using different cake mixes as suggested from fellow cooks.

Chicken Tortilla Soup

I revised an old recipe and made this for my husband to omit salt and fat from our diet. I also soaked about 8 oz. of dried black beans for the canned type. Soaked and cooked first before adding to soup. We all loved it and a standard at our house.

Mexican Bean Pie

I'll give it a 4 star with this recommendation. I used fresh black beans, soaked and cooked until tender. I added saute onion and a quick pulse on the food processor for the beans. lots of cayenne pepper to taste, salsa and topped with avocado and plain yogurt
