Raspberry Fudge Balls

This turned out so well. I expected it to be good, but I hadn't expected it to be as good as my "real" truffles...with half the work. The only changes I made was to use Couverture ( instead of chips, and added the interior of 1 large vanilla bean. Lovely! Thanks for sharing!

Apple Oatmeal Crisp

This was really good. I ommitted the white sugar part, as my apples were pretty sweet. I also added cardamom, cloves and allspice. This was a really yummy recipe.

Gingerbread Men

The butterscotch and lack of molasses is what made me want to try this recipe. As written, it's very good. I made the following changes, but only because my family like a "zingy" gingerbread. For spices, I used: 2 tsp grated fresh ginger, 2 tsp cinnamon, 1 tsp cardamom, .5 tsp nutmeg, .5 tsp ground clove. I put all of the spices together in a mortar and pestle and "pestled" them together, which releases extra oils from the spices. I also added the spices after the egg, but before the flour and baking soda. A planetary mixer (like a kitchen aid) is a real help for this recipe, it creates a very stiff dough that is probably more than a rotary hand mixer can manage.

Whole Wheat Pita Bread

This recipe is missing some rather important steps. Also note that whole wheat flour is very heavy for pita bread, and I recommend a lower percentage of whole wheat to bread flour. This recipe, as written, would be dense and inedible. At the very minimum, there should be a 1 to 1 ratio of bread flour to whole wheat flour.

Pumpkin Pie Squares

I changed this up a bit. Instead of using a 15 ounce can of pumpkin, I used a 30 oz can, doubled the spices, and baked for 50 minutes. I got a much deeper dish square that has gotten much acclaim.

Apple Brown Betty

I used salt instead of salt substitute, and real butter instead of transfatty margarine. I also used french bread to make the bread cubes. I added: 1/4 teaspoon each of clove, nutmeg, and an 1/8 tspn allspice. I find that leaving it covered for the entire hour gives a better result if you're using french bread.

This recipe is very similar to the 1950's Luchow's astoundingly good. I make mine without the breadcrumbs, and with only one egg. Also, I do a sour cream mushroom gravy to go with it. Once the chops are removed from the pan to a warm plate, I saute mushrooms and shallots in a 2 tbsp of butter and a tbs or two of brandy, and stir in 2 tbs of fresh sour's a yummy finisher to this most delicious of recipes.
