Portobello Mushroom Sauce

Man, this recipe is to die for!!! I really think if your sauce is sweet or too strong - you did not reduce it enough. I was making the same mistake and my husband came in and brought it up to a rolling boil (which the recipe does not tell you to do) to cook off more of the alcohol and then we turned it back down to a simmer. It truly made all the difference!!! Very rich flavor - I would give it 10 stars if I could!!!

Spanish Tortilla

This was soo good!!! I added about 3 cloves of garlic and omitted the bell pepper, just to have the more classic version of the Tortilla Espanola!!! This is normally eaten at room temperature, but you can't go wrong no matter how you serve it!

Broccoli Cheese Cornbread

We've been making this for years!!! The only thing we do different is that instead of the cornmeal - we use 2 boxes of Jiffy Corn Muffin mix. That really gives it a wonderful sweet taste!!! Yummm... This goes wonderful with soups in the colder winter months!

Texas Black Bean Soup

Honestly, I think 4 1/2 stars is more like it for us. This was very good and so easy to make. Actually, my 9 1/2 year old pretty much made this all on his own, that's how easy it was! The next time we make this we want to try it served over grilled chicken. I also wanted to add that I ran out of time so I did this in a dutch oven on the stove top. I brought it to a good rolling boil, and then turned it down to low and put a lid on it. I let it simmer for about an hour. No crock pot was needed!

Italian Meatball Sandwich Casserole

I loved this recipe so much I called all my neigbors telling them about it. I even plan on making this at our next Bunko party! My husband thought the mayo was a little overwhelming though. So, the second time I made it - I eliminated the mayo on half of the casserole and we were both happy!!! I've now made this several times and now eliminate the mayo all together and add ricotta cheese instead!!! Much better!!!

Made this for Bunko last night and it was a huge hit!!! The recipe I used called for three eggs and then 4 tsp. of pumpkin pie spice - but everything else was the same?!? yummm....

Cilantro and Garlic Potatoes

Wonderful! All four of my kiddos loved this!!! The only change I made was to add more lemon juice - I think 3 Tbs. in all. It was half of a very large lemon.

Wonderful!!! We added way more garlic and cilantro and replaced the cayenne with lots of black pepper. We also added 1/2 a green bell pepper, sauteed. Will make again for sure!

Sopapilla Cheesecake Pie

Made this for Bunko last night and all the girls were in Heaven! They compared it to creme brulee! I might do the thicker crescent rolls next time as the one reviewer suggested - too much filling for my particular tastes. I must say, this was the quickest and easiest recipe I've ever made, but everyone thinks you spent all day on it! You can't go wrong with this recipe!!! *We had it as leftovers straight out of the fridge tonight. The sugar was still crunchy and the filling was firm! I think it was even better cold!
