Asparagus Soup
I made this soup to take to a sick friend who on top of everything else has been having problems with her teeth. It had, of course, that subtle, delicious asparagus taste but was also creamy and smooth. I used a couple of extra seasonings, including red pepper. I also used cream instead of milk and my own chicken stock for the vegetable broth. Salt? Yes, I used a bit of sea salt. Lastly, I did NOT use a microwave oven to cook the onions and asparagus but rather used a saucepan and the stove top. The half-cup of soup I had was wonderful and I will make this soup again for me.

Coconut Pecan Chicken
I made this last night but as usual, made some adjustments for ingredients I didn't have on hand. I used low-fat Greek yogurt and walnuts rather than pecans and was very pleased with the results. It was crunchy, tasty and had a bit of a tang, thanks to the yogurt. Considering these facts -- it had no additional seasonings (not a pinch of SALT), was delicious, made for a healthy entree AND was ready in 35 minutes -- I'd call it a real winner. This is a dish I'll make again and again.

Caroline's Chocolate Fudge Frosting
I'm not sure I would make this frosting again since I couldn't stop sampling it! I really like my buttercream frosting but when I realized I didn't have any cocoa, I started looking for a recipe using baker's chocolate. What is a cake? A vehicle for frosting! This is the best chocolate frosting I've made or eaten. YUM. One note: I only used half the milk and was fortunate to have extra powdered sugar on hand because it was initially not nearly thick enough. Next time I will start with about 1/4 of milk and go from there.
