Easy Pesto

This is a great basic pesto recipe- I use pine nuts and possibly any other nuts I have around (pecans). I also add parmesan cheese as I'm a big cheese fan. You can substitute water for some of the oil if you'd like a lower-fat version. Very versatile recipe!

Raisin Buttermilk Coffee Cake

Swedish Tea Cookies

These are great cookies that I've been making for years. I think the recipe should say 'roll to 1/8th of an inch in thickness' as opposed to 1/2 (which would give you really thick cookies). Sometimes the dough is too dry to roll easily- feel free to add as much cream as necessary to get a dough of good rolling consistency- otherwise, the cookies will have a tough texture. Also, MAKE SURE to prick the cookies! One time I didn't, and they blew up like balloons.

Potato Latkes I

I added grated carrots and some parsley for some added color. Reviews had suggested using matzo meal in place of flour, I didn't have any so I though I'd use 2 Tbsp. falafel mix I had on hand (hey, it's Middle Eastern, right?)... actually turned out super tasty. Loved them.

Chicken Tikka Masala

This was excellent, but doesn't taste like the tikka masala I get at my favorite Indian restaurant. Not too surprising since it doesn't include many Indian spices (garam masala in particular). It's really super for what it is, though, esp if you don't have special Indian spices on hand.

The obscenities flew out of my mouth while making these balls, but boy did they fly into the mouths of my dinner guests! This dish is for a patient chef- allow 3-4 hours to make these. However, these are exceptional. Truly restaurant-quality. I eliminated the peas and didn't miss them (this probably makes it easier to shape the balls). Don't be concerned about the overwhelming flavor of the parmesan-risotto mixture, it's just right once the balls are battered and cooked. The oil I used to cook the balls didn't cover them, so I fried them for about 3-4 minutes on one side and then flipped. The less handling, the better. And they reheat beautifully in the oven to boot!

I think these are the best cookies I've ever made. I coated them with a simple icing made from confectioner's sugar dissolved in milk with a little vanilla. My boyfriend didn't want me to share them.

Spinach Almond Pesto

Awesome pesto recipe. I had no idea pesto could taste this good without basil. I didn't have any almonds in the house, so I substituted toasted pecans. Otherwise, I didn't change a thing and the pesto came out great.

Honeyed Chicken

Sounds strange, but it's really good. Great over rice if you make some extra sauce. I cooked the chicken for 20-25 minutes at 450F.

Butter Chickpea Curry

Italian Buttercream

This was alright. The only change I made was to use only 1/2 c. of shortening. This very well may taste like a proper buttercream, but I found it pretty tasteless. I don't like the overly sweetened icings, but this needs more sugar.

I like my icing only moderately sweet, not super sweet. Because of this, I only use 2.5-3 c. of confectioner's sugar; alternatively, you can use the recommended amount of sugar and keep adding shortening until the icing is palatable. Better than buttercream in a fraction of the time!

Carrot Burgers

I liked them; my husband did not. They become more 'burger-like' as leftovers because they have the chance to firm up in the refrigerator. Because of this, I recommend making them ahead of time and then reheating gently.

Summer Squash Pizza Crust

I actually thought this was too flavorful as a pizza crust (unless you are just topping with sauce and cheese). It would be great cut into long strips and served as a breakstick-type item.

You only need about half of the dressing (unless you like oil). Much better after sitting overnight in the refrigerator- noodles had a chance to soak up the dressing.
