Butter Cookies II

I just wanted to make simple cookies that didn't require any ingredients that I didn't have in my house everyday. These were WONDERFUL, I'm extremely pleased.

I think these are the best cookies I've ever made. I coated them with a simple icing made from confectioner's sugar dissolved in milk with a little vanilla. My boyfriend didn't want me to share them.

Easy Pesto

This is a great basic pesto recipe- I use pine nuts and possibly any other nuts I have around (pecans). I also add parmesan cheese as I'm a big cheese fan. You can substitute water for some of the oil if you'd like a lower-fat version. Very versatile recipe!

Oatmeal Raisin Cookies I

Used dried cranberries instead of raisins... cookies tasted fabulous right out of oven but were a bit hard and disappointing the next day.

I was excited by this recipe, but unfortunately it was very bland and I had a really hard time cooking the dough all the way through in the oil. Also, make sure in the first step where it says 'Combine all ingredients', do not include the shortening! This was tricky. Also, maybe I am inept, but I couldn't make anything that looked like a 'bow' from the strips that I cut. All-around awkward.

Chicken Tikka Masala

This was excellent, but doesn't taste like the tikka masala I get at my favorite Indian restaurant. Not too surprising since it doesn't include many Indian spices (garam masala in particular). It's really super for what it is, though, esp if you don't have special Indian spices on hand.

Sesame Pasta Chicken Salad

You only need about half of the dressing (unless you like oil). Much better after sitting overnight in the refrigerator- noodles had a chance to soak up the dressing.

Zucchini Apple Pie

I had high hopes for this one but I couldn't eat it without cringing. Zucchini do not bake the way apples do- you just wind up with a pie with stringy vegetables inside. I don't think the zucchini flavor is masked sufficiently by the spices. This one didn't fool me.

The obscenities flew out of my mouth while making these balls, but boy did they fly into the mouths of my dinner guests! This dish is for a patient chef- allow 3-4 hours to make these. However, these are exceptional. Truly restaurant-quality. I eliminated the peas and didn't miss them (this probably makes it easier to shape the balls). Don't be concerned about the overwhelming flavor of the parmesan-risotto mixture, it's just right once the balls are battered and cooked. The oil I used to cook the balls didn't cover them, so I fried them for about 3-4 minutes on one side and then flipped. The less handling, the better. And they reheat beautifully in the oven to boot!
