Great recipe, everytime I've made it everyone loved it. I use red onion and make sure to chop it finely but add a bit less than half a cup (maybe a 1/3 of a cup) as I don't like raw onion to be overpowering. I figure you can always add more if not strong enough. I don't find the onion is too strong in this dish if you let it sit for a couple hours. I've also made it with diced jar jalepenos as well rather than the cayenne pepper. Used baby Roma tomatoes about 8. I've served it with raw vegetables, homemade pita chips and also with corn chips. Delicious!
