Southwestern Quinoa Salad

Really enjoyed this salad. I made it with low sodium chicken stock and I used the adobo seasoning recipe from this site. When I made the seasoning I didn't add the salt in that recipe as I like to watch my sodium intake and let others adjust to their liking. I only had white wine vinegar as well so used that but all other instructions were kept. Will definitely make again.

Soft Oatmeal Cookies

I love these cookies! I gave 4 stars because of my changes but feel the end result is 5 stars. I use rolled oats not quick oats. I also used 1 cup of whole wheat flour and 1 white. As I don't like cookies too sweet and I always add other sweet extras such as choc chips or raisins, I only add the cup of brown sugar and omit the white sugar altogether. I make one batch which I prefer with raisins, crumbed walnuts, cinnamon and allspice the other batch my husband prefers with milk choc chips and I omit the cinnamon. I've also made them with white choc chips and dried blueberries but didn't like these as much although they were still eaten very quickly. Don't over bake and they are moist and stay that way for days in a plastic container. The dough freezes well as individual cookies put in a freezer bag as previously suggested to make fresh cookies whenever you feel like it.

Spiced Quinoa

I really enjoyed this dish. I've made this twice now once with low sodium chicken stock and pine nuts and once with vegetable stock for a vegetarian friend and slivered almonds. If pinenuts are too expensive or you don't have them the almonds are just as good. I didn't add the extra salt either time as its salty enough for me. I liked the sweetness of the raisins as well. Both times I added some chopped coriander/cilantro at the end. Tastes just as good if not better the next day.

Indian Dahl with Spinach

I gave this 4 stars as I followed a lot of the other reviews to make it more flavoursome. I used 2 cups of vegetable stock to cook the lentils and the rest water. I didn't add the salt as the stock was salty enough for me. Frozen spinach defrosted worked well. I doubled the spices and also toasted the garam masala with the onion to bring out the flavour more. I didn't find it spicy and would up the chilli next time maybe add a fresh chilli with the onion. I added 2 cloves of garlic with the onion as well. I didn't add the coconut milk either but ate it with raita (plain yoghurt with chopped up cucumber and lemon juice) and basmati rice. Makes a lot and makes you feel good that you're eating something so good for you!

Blueberry Lemon Loaf

I really enjoyed this cake/loaf. As I'm from Australia I'm not used to such sweet things being called a bread and eating this for breakfast? It seems like a dessert or something sweet to have with coffee which I guess explains breakfast ;-) I didn't add the topping but put the zest of 2 lemons in the cake. The step to roll the blueberries in the flour worked well. I also used 1 cup of all purpose and 2/3 cup of wholemeal. My cake was moist and had a good lemon flavour. Thanks

Guacamole

Great recipe, everytime I've made it everyone loved it. I use red onion and make sure to chop it finely but add a bit less than half a cup (maybe a 1/3 of a cup) as I don't like raw onion to be overpowering. I figure you can always add more if not strong enough. I don't find the onion is too strong in this dish if you let it sit for a couple hours. I've also made it with diced jar jalepenos as well rather than the cayenne pepper. Used baby Roma tomatoes about 8. I've served it with raw vegetables, homemade pita chips and also with corn chips. Delicious!

Smoky Chipotle Hummus

Amazing dip! I loved this dip as did everyone who tried it. I only added one garlic clove as mine were huge. Slightly less tahini as I can find it overpowering in some hummus. I only added one roasted red pepper as I only had one left in the jar. I couldn't find the pepper in adobo in Australia so added some chopped jar jalepenos for spice. This may mean I didn't have the smoky flavour but we all still loved it.

Dark Chocolate Cake I

This is a beautiful tasting moist chocolate cake that looked great as a two layered cake once i covered it with cream cheese frosting. My problem is that I couldn't get mine out the pans without the edge sticking and crumbling off. I used baking paper but it stuck to it! I made sure my butter and eggs were room temp and I creamed the butter and sugar well to make sure it was aerated. I allowed the water and cocoa to cool and I added flour first and last when adding it with the chocolate water to the butter mixture. I'm not sure what went wrong?! I did add a shot of expresso but that was my only change.

Simple Turkey Chili

I followed the recipe that the author posted. Review jan 2012 They reported that the printed recipe was changed. They sautéed the onion first with peppers and celery so I did this to get more vegetables in. I used all the spices but increased them slightly except the chilli as I had added more vegetables and a can of black beans and red kidney beans. I didn't mash my beans. I cooked the spices with the mince and vegetables before adding the stock and tomatoes to intensify their flavours. I cooked it on a slow heat for a couple hours and added half the water with some powdered stock. I also added in tomato paste. I then put in corn kernels for the last 10 mins. It was really delicious and I'm sure will just taste better tomorrow. I didn't feel it made 8 serves even with my additions. Will definitely make again!

Spicy Salsa

Really yummy! Made it the first time with one jalapeño as mine was really hot and I kept the seeds in. Next time I added a 1/2 teaspoon of cumin. It may not be typical pico de gallo with celery but it adds a lovely crunch that I enjoyed. People don't need to be mean if someone deviates from a traditional recipe, that's half the fun of cooking!! Don't knock it till you try it. It would be so boring if we all ate the same thing. Fresh and healthy and tastes great with just about anything!
