Sweet Potato, Carrot, Apple, and Red Lentil Soup

Good soup, but meh. Would've liked to see spices that complemented the apple in it. I also had to add lemon juice to brighten the flavour. It was pretty flat otherwise. Probably wouldn't make again, but I had all the ingredients on hand so it worked.

No Bake Cookies III

First time i made them they were delicious, but they werre way to greasy for me to feel good about. This time I brought about 2 tbsp of butter, 1/2 c white sugar, 1/3 c agave, milk, cocoa, and salt to a rapid boil for 1min. Working quickly (having everything prepped in advance) I added the peanut butter to melt, then 1 small mashed banana, and once all incorporated, I added the vanilla and oats. They turned out way less greasy, but equally delicious. The banana adds a subtle flavour, but its works well with the peanut butter and chocolate. I'm proud that I figured out an alternative that works!

Wine and Dijon Marinated Pork Loin

I wrapped this in foil and did it on the bbq for guests and was really ashamed over how it turned out. The flavour was very herby - I think I would have liked it way better on lamb. Overall, the flavour combinations seemed very mismatched. And in foil on the bbq the meat just went dark grey and soggy with white dryed yogurt spots all over - very unappetizing. Won't try this again.

Coconut-Curry Lentil Stew Served over Quinoa

I didn't love this. Compared to other curries, I found the flavour flat. It's not that it wasn't flavourful, it just wasn't multi-dimensional. Maybe could be helped by a 'sour' element (ie. lemon juice)? I like the idea of a lentil stew, but would probably alter it quite a bit in the future.

Cookie Dough for Ice Cream (Eggless)

Didn't really enjoy this. As many others said, the texture was funny and needed more flour, and then it just became too floury. And no matter what I did, it just didn't taste like real cookie dough. (Although I do admit it was better in icecream than on its own). Next time I think I'll just make the real thing...

Spicy Sweet Potato Soup

This was really good - very different though. Definitely enjoyed it. And I didn't even have fresh ginger, a real lime, cilantro, tomatoes, or sour cream! I halved the peanut butter as others had suggested, and it was just perfect. I also added some heavy cream at the end, and it made it that much better. Very good!

Peanut Butter Vegetable Chicken Soup

This soup is actually pretty good. It looks weird though. I wouldn't serve it to guests. My hubby walked in and looked at it skeptically and said, "So... is this one of those soups that will be better the next day?" but when he actually tried it he admitted it's really good. For those that are having a problem with the flavour, I would suggest making sure you use a really good broth. I've used some bland broths before and since it's a broth based soup the original flavour of the broth is really important. I make mine own broth and the soup tasted great (although I did add a sprinkle of chili flakes and about a tbsp of sugar to the soup before serving).

Easy Veggie Samosas

I used Kris B's suggestions for the most part (added carrots, potatoes, peas, ginger, garlic, cumin, chili powder, cilantro) and the filling was amazingly good. However, I tried baking them in eggroll wrappers, and they didn't turn out so good. The skin was quite tough and slightly chewy. Edible, but could have been better. Also, with all the chopping and peeling, they took me about an hour and a half, not 45 minutes.

Pesto Pepper Tortellini

This turned out very nicely, although I did make a couple moderations. I used both red and yellow peppers simply for colour. I also used oil instead of butter. Before adding the cream to the skillet, I whisked 1 tbsp of white flour into the cold cream to add thickness. And I added a good amount of parmesean cheese in with the onions and basil and also some fresh ground black pepper. In the end it worked out really well, but I do agree with the user who said it could stand some salt (that's something to be said since I am the type of person who never adds salt to anything). The sauce didn't have as much taste as I would have liked and I think salt would remedy this perfectly.

Sugar-Free Cardamom-Mango Smoothie

I made a few alterations (using frozen mango because I think it blends smoother/thicker and mango juice concentrate in place of the milk and the sweetner), and it was amazing. The mixture of cardamom and mango reminded me of an Indian style pumpkin pie. Very tasty.

Whipped Shortbread Cookies

After altering the recipes quite drastically, these cookies turned out perfectly. Based on the suggestions of other users, here's what I did differently: -Whipped butter, 1/2 tsp of vanilla extract and 1 tsp of almond extract together for 5 minutes. Then creamed together butter and sugar for another 5 mins, then slowly added a mixture of 2c. flour and 1/4 corn starch. Rolled the dough into balls, and flattened slightly. They did not flatten too much (almost not at all, actually), or fall apart. Hardly sweet at all. Made very nice shortbread.

Fresh Peach Dumplings Served with Hard Sauce

i would never make this again. the dough was so crumbly I couldn't get it around the peaches. the peaches then fell apart in the oven so it turned out more like a peach crumble or cobbler. i added sugar to the peaches but it still tasted like dough and cooked peach. and in the sauce i couldn't get the butter to mix with everything else so it was really lumped and looked terrible.

Rice Pudding

This is exactly what I was looking for. Instead of uncooked rice I used left over coconut rice from dinner. Also, I used only about 1/4 the amount of milk, and added cornstarch to help thicken it up.

Creamy Italian Dressing II

This is the first dressing I've ever made, so I'm really not able to compare it to any others... But I found it very simple to make, and very tasty. Much more unique and tangy then a store-bought dressing. It was a little thick though at first so I put in extra water, and would recommend only 1/2c. of mayonnaise. Also, adding ground pepper was great b/c it added a little spice.

Award Winning Soft Chocolate Chip Cookies

I just made these cookies, and they turned out pretty good, but DO NOT OVER COOK!!! I made one batch for 12 min, and when I took them out and they looked "done" on the inside but were sorta mushy and tasted doughy. So I let them cool for about 5 min on the pan and then on the cooling rack until they had COMPLETELY cooled... and they were PERFECTO! I also made another batch at ~15min and they looked alright when they came out, but once they cooled they turned out really cruchy and dry. My advice to you: when you take them out and they don't look taste done, but the bottom is lightly browned... you should be fine! yum!
