Morning Glory Muffins I

Have made this many times now and passed on to friends and family. Never add oil or apple butter but usually add 1/2 cup crushed pineapple or baby food prunes to replace fat. I also just mix wheat germ and walnuts in with the batter. These muffins are so good and I think flavor gets more intense a day or 2 after baked.

Black Magic Cake

Ok, so I made this last x-mas because I knew my brother loves chocolate cake but for some reason he was on a diet or something and did not even try it. I could not try it because I am a diabetic so I waited to see what everybody else thought. There were so many deserts that I don't think it stood out so I thought I would probably not make it again. I made it exactly as recipe stated and it LOOKED delicious. Anyways when I got up the next morning, my nephew and his 2 friends who had spent the night had pretty much devoured the whole thing. He is a picky eater so I think I will make it again at Easter just to make sure it was not just starving teenage boys who will eat anything in front of them.

Low-Fat Blueberry Bran Muffins

I have made these muffins many times and they are fabulous.Very versatile recipe as you can make many substitutions and they still turn out great. I have used non-fat yogurt for oil, honey for sweetness, and 1/4 cup wheat germ. It is a very moist muffin so it last longer if refridgerated.I have substituted apples, cranberries,nuts, but blueberries are the best.

Beef Tips and Noodles

This is a very good recipe that can be made with much less fat if you use Kansas City Steak AHA sirloin tips and Campbell's 98% fat free cream of mushroom soup. I seasoned with garlic salt and marinated the sirloin tips with some worcestire sauce before baking them(keeps the meat from being too tough) with a TBSP EV olive oil in a frying pan on top of stove.After sirloin browned then added soup mix,cream of mushroom and cut up onions and peas. Cover and let simmer for 5 min.Delicious!!
