Fluffy Pancakes
By far the best pancake recipe I've ever had!! I double to feed 3 1/2 of us (2 hungry guys, one toddler and myself) as it makes about 5-6 medium/large pancakes. I added chocolate chips this week to half of it for my teenager and he said they were awesome too. They are so light and fluffy and have that wonderful buttermilk taste. A must try!!

Baked Pork Chops I
This was WONDERFUL!! Both my picky eaters loved this dish. I followed the recipe as is, except I only baked it for 45minutes and the pork was done to perfection! I heated the sauce in a pan so it was hot when I poured it n the pan. I used Marsala wine in the sauce and it delicious!! DO brown the coating well as it stays on perfectly when done that way.

Jamie's Minestrone
Absolutely AMAZING!! My husband and 12 year old will not eat: kidney beans, celery, tomatoes (unless puréed in spaghetti), spinach or zucchini and they LOVED this soup! Followed recipe with no changes, scooped out 1/2 for me and puréed the rest. Gave my boys the puréed version and I ate the chunky of course...my 12 year old said "WOW this is the best soup I've ever tasted!" husband said ditto. When my 12 year old got up to clear the table he gave me a hug and said "mom, thanks for taking all the vegetables out of mine and giving me just the broth." what a testament to how wonderful the flavors are in this soup! I thought the 3Tbls of herbs would be too much...not so! This is a must try! I added baby tortellini for my pasta as it was what I had on hand. Thanks Jaimie....my family all ate vegetables and loved them for the 1st time ever!
