Hash Brown and Egg Casserole

Freeze individual servings for widower living alone. Cooking for one senior is difficult, so I made this dish and then divided the results into six freezer Tuperwares.It's much better than frozen TV dinners.

Chicken Milano

As a retired widower living alone, I'm a "single pan" cooker. I pounded the chicken flat and cut into 3/4 cubes and browned them in butter and removed from the pan. Then followed the recipe except substituted white wine for the broth and increased the cream. Love lots of sauce! While the tomatoes, garlic begin to simmer, tossed the pasta in a pot that already had boiling water. Hmmm...I guess that's two pans. Returned chicken and added drained pasta Sprinkled with freshly shredded Parmesan.

I have not baked a potato since the microwave was invented. This worked out fine in the micro, but I also added bacon bits to the mix.

Grandma's Chicken Chardon

Add microwaved potato for one dish meal. As a retired widower living alone, I always look for one dish meals. I reduce the recipe to serve one, and that leaves plenty of room in the baking pan. After the chicken goes into the oven, I nuke one potato, slice it lengthwise, and scoop out half the potato. Then fill the cavity with shredded cheddar and topped with bacon bits. The potato halves are added when there is 10 minutes to go that melts the cheese. Top that with sour cream and chives, and I have a simple and tasty one dish meal.
