Five Minute Ice Cream

I added a little vanilla. I used my 3 cup Food Processor and put the blended mix in the freezer for an hour or so. SOOOO good! I used strawberries and next time I think I'll try peaches.

To Die For Blueberry Muffins

The muffins are DELICIOUS! Very moist and the crumble topping makes them even more yummy. Wouldn't change a thing! I am curious if anyone has ever made this into a coffecake/buckle before?

Avocado Soup with Chicken and Lime

I used lime juice, not fresh, and 1/4 cup was too much. I'll probably cut the lime juice in half next time. I would like more avocados. It was delicious though! I added just a pinch of cumin as well to give a little more mexican flare. AND I was feeding this to a 3 and 1 year old so I skipped the jalapenos and opted for 1/2 can of green chiles. Still good and not too spicy! Oh, and when it says 4 servings it's not kidding. It's 4 servings of about 1-1/2 cups each. Next time I'll double it for sure!

Mie Goreng - Indonesian Fried Noodles

I would say 2 pkgs of noodles is plenty. Undercook them at first because you will be simmering them in the pan at the end. It was pretty good the first time around but I would definitely double the vegetables and make sure to cut the broccoli into smaller size florets so they're done at the same time as the rest of the vegetables.

Shrimp and Asparagus

The parmesan cheese adds the perfect touch! I, too, changed this to be healthier by using only 2 T olive oil to saute everything. While cooking this seemed like it wa going to be REALLY bland but after adding the parmesan cheese it all blended together perfectly!

Mushroom Broccoli Alfredo

This was surpisingly good! I was a little leery about "alfredo" made from Cream of Mushroom but it was good and relatively healthy if using fat free soup and wheat pasta!

Apple Pie Filling

I used my own home canned apple slices to make this filling. I skipped the lemon juice and nutmeg (not a fan of nutmeg). Basically, I boiled the ingredients without the apples until it came to the right consistency and then threw in the apples. My apples were already cooked so this took me maybe 5 minutes. Tasted just like apple pie straight out of the pot!!

Caramel Apple Cheesecake

DELICIOUS!!!!! I used 1 jar of home canned apples and made it into "apple pie filling" by following the recipe called Apple Pie Filling (skipped cooking the apples as mine were already cooked). This made enough filling for TWO cheesecakes. I also made my own graham cracker crust and added chopped pecans to the crust. It was an easy recipe to follow. If followed exactly, it will not fail! The pecans in the crust AND mixed into the caramel topping were the two things I added that made this even more outstanding than as written! Seriously, use pecans!! The best part is this cheesecake doesn't have to set overnight! It was ready to eat 2 hours after coming out of the oven. 1 hr to cool to room temperature, add topping, cool in fridge 1 more hour, DONE.

Veggie Stir-Fry

The recipe as is isn't that great. There wasn't a whole lot of flavor added to the vegetables. I would add more garlic and add ginger. Probably other seasonings as well.

Portobello Penne Pasta Casserole

Very good! I used a multi-grain penne and it was yummy. Next time I might add chicken or broccoli in place of spinach would also be good. I will also add some more basil. I cooked a bag of fresh spinach in place of the frozen and doubled the mushrooms. I love this recipe because can make it really healthy without sacrificing flavor!

Pumpkin Turkey Chili

I followed the advice of others. So, in short, I used 2 UNDRAINED cans of tomatoes (one w/ green chiles added), added1 can black beans, 1 tsp cumin (approx until it tasted right), and 2 tsp minced dried bay leaves. I used one whole green pepper instead of the two 1-cup amounts and I used 1 lb of ground beef. Topped with shredded "Mexican" cheese and sour cream. I had NO taste of pumpkin so this is a GREAT way to add nutrients without sacrificing taste. THIS WILL BE SPICY especially for a young child. My 2-year old AND 1-year old ate it after I added lots of sour cream.

Apple Crisp II

No extra water needed. I would add another teaspoon of cinnamon and cut the white sugar down to 1/2 cup. I used home canned apples and it only needed to bake for 30 minutes.

Basil Tomato Soup

This was delicious. I added 4 tsp of dried basil leaves and then pureed the soup when it was done to give it a creamy consistency. I think it would be just as good with milk and served with a crunchy bread. Mmm.

Hearty Chicken Tortilla Soup

This was great! My two year old even ate it! I added a can of black beans for some extra nutrients. Added just 1/3 c rice and used my whole carton of broth (4 cups). I added a can of green chiles along with my can of corn because I didn't have the corn w/ peppers. I was also missing the cilantro :( It was still delicious but I'm sure it would've been even better with some extra cilantro!

Pumpkin Cheesecake II

DON'T leave out the whipping cream! The first time I made it I made three changes: fresh pumpkin, 1/2 c brown w/ 1/4 c white sugar, and added a simple topping (1/2 c pecans, 1/3 c brown sugar, 1-2 T butter). It was the most delicious cheesecake I've ever tasted. The second time we forgot to add the whipping cream. 2T doesn't seem like much but the cheesecake was 1/2 as tall. Instead of firming up at 3 in tall, it was 1-1/2 inches. So USE THE WHIPPING CREAM!

Red Sauce Chicken Enchiladas

I LOVE these enchiladas. I've shared this recipe with a few friends who don't use Allrecipes.com and they say these are delicious as well. Pretty simple and straight forward directions. Definitely a keeper. To cut down on time you can boil the chicken breasts first.

Roasted Brussels Sprouts

I've made them this way for years. My husband grew up hating brussel sprouts until I made them this way for him. I also add garlic sometimes. This is also how I convinced my husband to eat asparagus. Works for those too :)

Perfect Pumpkin Pie

Puree your fresh pumpkin! The flavor was good but I read somewhere that you can just mash your fresh pumpkin. WRONG. The texture of my pie was spongy and stringy- I'm assuming because I didn't puree it. Flavor was pretty good. I did substitute allspice for the nutmeg.
