Chicken Crescent Casserole

I found this on a whim just trying to use the ingredients I had and it turned out so well that my hubby specially requested I save it and make it again. I tweaked this to make it my own... (cooked chicken thighs in olive oil and garlic, then added water, veggie bullion cube, paprika, salt/ppr and a touch of curry. After scooping the chicken out and adding it to the croissants I used the left over stock for cous cous which came out amazing. Rolled the croissants, topped with a mix of cream of chicken, 2tbs of powdered broccoli cheddar soup mix and milk. Layered grated cheddar on top. Cooked at 450 for 20min) We will most definitely be making this again.

Spaghetti Squash I

Very easy base recipe that's easily tweaked. I used coconut oil instead of veg oil and added some curry and garam masala since I was in the mood for some middle-eastern food. It was absolutely fabulous and I got TONS of compliments. This recipe is a keeper :)

Catfish Cakes

I dont like the taste of catfish and neither does my husband, but we had some frozen that we didnt want to go to waste so i decided to make this. It turned out great with a couple tweaks: used food processor to finely chop yellow and green onion and a little each of red, yellow and orange pepper. Used ritz vegetable flavored crackers chopped finely in food processor, added 2 eggs instead of 1 and baked the fish until flakey before adding to the mix. I didnt have old bay so i seasoned the fish first, and also added my own seasonings to the mix. I saw in one review not to use too much oil but i learned from past crabcake mistakes that if you dont use enough oil to go atleast almost half way up the cake, you'll find yourself with browned top/bottom with the middle mushy and/or not cooked well. Overall I give this 2 thumbs up coming from 2 people who hate catfish, this tasted awesome!

Corn Pudding V

I made this for my husband to bring into his work for a thxgiving potluck. He text me and said everyone loved it and pple were asking for the recipe! I followed other reviewers tips: Add 2 eggs, 1/2 cup half&half, 1/4 cup sugar, 1tbs crushed red pepper, salt/pepper and fried up some bacon which i ground up in food processor, added to the mix and used the leftover bacon grease to grease the 9x13 pan with. Baked at 350 for 55 minutes. It was just a test drive to see if pple liked it, if they did i was gonna make it for our family thxgiving. Since its a huge hit I will for sure make this for the family! Hopefully it will turn into a traditional recipe I can make every year :)
