Zucchini Parmesan

I grilled the zucchini as other reviewers suggested to make it less watery and added abundant cheese. It tasted liked eggplant parmesan! My young daughter helped to slice the zucchini so the slices were thicker than I would like, but still very good!

Crispy Fried Chicken

It seemed like the chicken that I cooked IMMEDIATELY was the only chicken that turned out crispy. The step that she said was crucial to let it sit until it had a glue consistency seemed to be ruin the recipe. Also, next time I will add more spice or zest. This seemed bland to me.

Eggplant Parmesan II

This was really good and I will make it again. Perhaps next time I will cook longer than the alotted time as it was a little firm. Leftovers would make a great sandwich- if there were any!

Shortcut Chicken Cassoulet

My husband really liked this. I loved the french bread crumbs, I left them big like croutons rather than blending them. Mine turned out like a stew, had expected more of a casserole, but that was okay.

Basic Ham and Bean Soup

I had to cook the dry beans WAY longer than the hour stated in the recipe- more like overnight in the slow cooker! I also added chick bouillon and other spices as I felt the broth was a little bland.

Cha Cha's White Chicken Chili

I omitted all but a little of the cayenne pepper. It was awesome! I did forget to add the cheese!! I had it at a friends and it was definitely a 5! It must've been the cheese. I also crushed up an extra can of beans to make it thicker.

Blueberry Pie

My kids helped me make this so the measurements might have been a little off! This was the first time I made a lattice top pie and it was much easier than I thought. I thought this was on the tart side, but my husband LOVED it, would have been just perfect with a scoop of ice cream. I baked it only for 40 minutes and it was starting to get really brown. I made a cookie cutter star and placed it in the middle for a 4th of July pie and it looked elegant.

Broccoli and Sausage Cavatelli

My husband really liked this as he's not a fan of tomato sauce. I added extra red pepper to mine as I felt it needed more flavor. I also added fresh spinach to the boiling pasta along with the broccoli to sneak it in on my kids.

Tomato Pie II

I am a huge tomato fan and absolutely love this recipe!! I used fresh basil (the whole bunch) and substituted mozzarella for the cheddar- and just added the whole bag (an extra 1/2 c or so)!!!

Easy Lasagna I

Very easy. I did add oregano to the cheese mixture and garlic to the beef to give it more flavor. I tried to add the mozzarela cheese early and cut out the last 15 minutes of cooking, but the noodles were still too tough. It needs the full one hour. I also added 1/2 jar extra of sauce as other reviewers recommmended and it was good advice- the leftovers were on the dry side.
