Really Rich Banana Bread

I made this recipe as muffins because the batter was way too much to make a loaf. They turned out wonderfully after about 30 minutes. Thanks for the recipe!

Orange Cream Fruit Salad

I personally use SF brand name pudding (not sure if all brands use the same sugar substitute) for a lower calorie version - but if it's for a crowd, the recipe is perfect as is. Additionally, you can use 1 cup milk & 3/4 cup o.j. if you don't have concentrate. Thanks so much for such a versatile recipe - a side at a picnic, or a healthier dessert!

Easy Avgolemono Soup

I am SO tired of reading reviews of a SPECIFIC recipe that someone made, when the reviewer took more that half of the ingredients and substituted, omitted, or added them. That's not even the same recipe anymore! Now, if you try it right the first time and then suggest other versions, that's helpful and your right. But don't kid yourself that your helping anyone by changing the recipe initially. If it was my recipe I'd find that very insulting. This recipe (as is) brought me back to Tarpon Springs, FL, a Greek shipping town - kudos to you!

Tartar Sauce I

I thought I didn't like tartar sauce! Thanks for converting me. The only thing I did differently was an additional tbsp of relish - and I used sweet pickle relish.

Oatmeal Pancake

DO NOT USE A CAST IRON SKILLET!!! Definitely use teflon. This was good - except it kind of became scramble in the pan. I added some Splenda to the recipe and topped it with some butter. IDEA: baking it in a dish - sweetened, it resembles a whole grain bread pudding! Very good!

Slow Cook Thai Chicken

What a great recipe!!! I improvised a little; we didn't have red peppers. I also added 6 potatoes cubed instead of using rice, so it was a wonderful stew! Because of the potatoes, I doubled all of the sauce ingredients. My husband LOVED it! Thanks for the great recipe!

Eggnog II

I have been searching for an easy SF eggnog recipe for FOREVER! This was a great base-line recipe. After some experimentation, I omitted the vanilla extract completely (too much vanilla with the pudding), and added about 1 tbsp of rum extract instead. The only other problem I found was that if I let it sit overnight in the fridge, it got TOO thick - so I had to add some more milk, and then some added Splenda to sweeten it up a bit more - not much, though. I also added quite a bit of nutmeg, but I LOVE nutmeg. Thanks so much, Mark! This was so easy - and even my anti-aftificial sweetener friends loved it!

Microwave Oven Peanut Brittle

Black Beans and Rice

I also used chicken broth instead of veggie, and it turned out wonderful!!! I was thinking that if I browned up some ground beef, it would be a complete meal! Thank you!
