California Roll Salad

If only for the dressing, (I made many substitutions to the basic salad due to the ingredients I had on hand), this recipe is 5 stars! What a great substitution to regular old salad! I was very skeptical of the rice, but it added a great touch. Also, used shrimp from the freezer in place of the . Yumalicious !

Cherry Bomb Chicken

Awesome! Used jalapeños because they were in the garden! Everything was spot-on! Got out the dipping sauce, but no need (or desire) to use it as the dinner was perfect already . As Hubby said "it's a keeper!"

Bloody Mary Bites

The bites were yummy at first, but I expected them to be "preserved" for a while because of the intense brine. 2 weeks later they were soggy and had an "off" flavor.

Cream Cheese Basil Summer Squash

Good! A fraction of the cream cheese, though, and it would be better! Just enough to coat the veggies is all that it takes. Would also be good with other garden veggies added...bell peppers, onions.....

Chipotle Cream Chicken

Absolutely awesome sauce! Just sautéed onions and diced yellow bell pepper , added the broth, sour cream and chipotles and threw it in the blender. Put it over chicken enchiladas I had made previously and frozen for a later date (without sauce). I usually use canned sauce but didn't want to go to the store so I adapted this recipe. Won't be using the canned stuff EVER again!
