To Die For Blueberry Muffins

These muffins were fantastic. I made exactly as written, other than a splash of vanilla. I doubled the batter but not the crumb mix and it was perfect. Made 22 regular size muffins. I will be adding this to regular rotation to try with other berries. The batter worked great with a batch with chocolate chips instead of the berries. Just adjust baking time since berries need more time.

Slow Cooker Carnitas

Yum Yum! My 6 year old was ready for dinner at 3 PM when she walked into the house and smelled the carnitas. I used pork tenderloin, since that's what I had on hand. I doubled the spices and used real garlic (left off the cinnamon). I loved the tip about crisping for 10 or so min in the oven at 400 degrees. Made a world of difference. Made these with best spanish rice recipe and mexican corn recipe from this site. Dinner was an absolute HIT on all fronts. We will be making these again this weekend when we have company. Also used the left over carnitas for dinner last night tossed in salsa to top a frozen pizza before baking. Wow....

Best Spanish Rice

By far the best spanish rice I have ever made! I made this a couple nights ago with slow cooker carnitas also from this site. Also made the mexican corn with it. Best meal I have made in a long time! I barely changed anything. Was good as is. I used corn and black bean salsa, since that was all I had on hand. The only change I would make next time would be to add an extra 1/2 cup of broth. Was just a tad bit too dry. Overall... really easy, and flavorful. I will be making this again this weekend when we have company over

Mexican Corn

Tasty! It was definitely a good change from the usual corn recipes we try at my house. I used two jalapeno though, since that was all I had on hand. I was going to add in pickled ones but upon tasting, thought that would have been way too much. It had a good punch without being overwhelming. I sauteed onion (1/2 an onion), garlic (2 cloves) and the jalapenos in the butter, then added the corn. Only needed 1/2 the cream cheese. Turned out really good!! Will be making this again this weekend for guests.

Candy Cane Fudge

Mmmmmm.... so good. I just finished a test batch of the fudge to give away as holiday treats, and I'm loving them. I might have to give it away today,before I eat the whole pan full. I made it almost exactly as written, except for the food coloring. i first put the chocolate mixture into the dish, then put 5 scattered dots of red coloring, then swirled then. Very pretty presentation. I did also sprinkle a few pieces of the crushed candy canes on top before chilling. I might omit this next time though. A little too much crunch as per hubby's remarks. All in all.... easy and inexpensive. Will definitely be using this again and again.

Double Layer Pumpkin Cheesecake

I baked this cheesecake last night and it was fantastic. I made it almost exactly as is, even though I did add a little more of the spices (I like my pumpkin desserts pretty spicy) and an extra 1/4 cup of the pumpkin, since some people commented it was too mild. It turned out great. Allow a little more baking time if adding more puree (5 extra minutes). This is my new holiday fave!

Pumpkin Spice Cupcakes

MMMMMH!!!! These cupcakes are divine! Let me start with the icing. The highest compliment came from my husband who HATES frosting. He was practically licking the bowl after I made it. I did take the advice of many reviewers and used a whole can of pumpkin, heaping spoons of the spices, 1/2 cup oil and 2 cups of powdered sugar instead. I baked at 350 for 23 min. Perfect. The cakes were moist and delicious on their own, but the icing totally seals the deal. I will be taking them to my mom group. I did make the icing last night, and plan to frost them as I am walking out the door.
