Spaghetti with Chicken Breast, Bell Peppers and Romano Cheese

Reviewed: Mar. 11, 2014
The recipe states 1/2 lb of chicken. I added about 1 lb of chicken and barely had enough for 3 servings. Lastly, a second pan to partially cook the chicken, that was just 1 more pan to wash! The chicken broth did add something to this recipe. Will not make again.

Microwave Corn on the Cob

Reviewed: Jul. 22, 2012
We love Corn On The Cob! We thought boiling takes out the nutrients, so we've been microwaving cobs for a long time. I used to place the cobs in a baking dish with a bit of water and cover with plastic wrap. But, it's a GREAT idea to just wrap in wet paper towels. We do not have a dishwasher, so it eliminated a dish to wash and dry! I just place the wrapped cobs on the rotating plate in the microwave. Our microwave cooks 2 cobs in 5 minutes, and we let them sit in microwave for about a minute. They are HOT when they come out! We have not tried cooking them in their husks- think they would be too hot to handle! Anyway, my husband does a GREAT job husking!

Brooklyn Girl's Penne Arrabiata

Reviewed: Apr. 5, 2012
Easy & Delicious! Not an ordinary chicken dish. We usually don't like red sauce, but this was great! Did not have penne pasta so substituted wide noodles. Used less olive oil to saute. Cut chicken breast in cubes, dipped in 2 eggs, but used only about 1 cup of the breadcrumb mixture. Will make again!

Swiss Chicken Casserole I

Reviewed: Mar. 16, 2012
Great and easy. Ingredients always on hand. After reading other reviews, I spread a thin layer of soup and milk mixture-used Cream of chicken with herbs-on the bottom of casserole and sprinkled chicken with Mrs Dash, poultry seasoning, garlic powder and pepper. Placed 2 pieces of cheese on each breast-used swiss on half of the breasts and provolone on the other half-didn't have enough of 1 kind for all- spouse liked swiss, I prefered provolone. Mixed the melted butter with grilled onions with Herb flavored Pepperidge farm stuffing. Did not uncover-some of the stuffing was crunchy and some was not- a good variety in my opinion. I always use a meat thermometer-it reached temperature 5 minutes before suggested. Husband loved it told me to add it to the menu. The suggestion of adding broccoli to casserole was a good one-think I will try that next time. I think this would be a 5 star recipe without any changes, but my husband and I prefer a little extra zing to our meals.

Sloppy Joes II

Reviewed: Mar. 3, 2012
Easy to make; converted recipe to use 1 & 3/4 lb of ground beef (10 servings) While meat, onions and green peppers were browning, I combined other ingredients in a 2 cup glass measuring cup. I was careful not to over brown the meat and veggies and stirred the sloppy joes frequently during the 30 minutes. My husband said these were the best sloppy joes he ever had in his life! Not too sloppy, not dry, a little sweet and great tasting. We had only enough for leftovers for 1 meal: next time will increase servings so we have more leftovers.
