About this Cook
My interest in cooking began in my late teens by encouragement of my dad. I love to explore new recipes as well as utilize old favorites. I wouldn't say I focus on healthy so much but do try to maintain well balanced hearty meals made with love.
My favorite things to cook
I love southern and mexican dishes the most. I'm a garlic and butter fanatic. I try to introduce new spices and herbs frequently and try to incorporate a variety of vegetables (onions, celery, peppers) into recipes by either adding to the main dish, making a sauce or maybe a relish-type side dish.
My favorite family cooking traditions
There are family favorites I like to keep alive that my mom made growing up. We always have a seafood spread on both Thanksgiving and Christmas Eve. Smoked oysters wrapped in bacon, peel & eat shrimp with garlic butter or cocktail, bunya calda (sp?) w/bread & broccoli for dipping, and also olives and cheese.
My cooking triumphs
I have had many, especially a success on an complex recipe. The challenge is ongoing.
My cooking tragedies
I have had many of these too..over cook, under cook. Once I left the tuna out of the tuna casserole!

Warm Shrimp Salad
This salad was easy and refreshing, plan to use it frequently during the summer. Only change was ommitting the celery. Made dressing out of 1/4 C mayo, 1/4 C sour cream, 3 tsp milk, 1 tsp salt, 1 tsp celery seed, 1 tsp garlic powder and black pepper to taste. In the end I added about 3 T of Newman's oil & vinegar dressing to thin out just a bit. Delicious!

Crispy Rosemary Chicken and Fries
With exception of fresh oregano, I made this recipe to a T and it was favored and fabulous. It's a keeper in my recipe box

Grilled Bacon Jalapeno Wraps
I make these but using grated sharp cheddar cheese and fresh shrimp. Great on gas or charcoal grill. We buy about 40 jalepenos to 1lb of shrimp to ensure everyone gets more than one. Quality ingredients especially bacon is the key.
