Hot Italian Sausage

I made this recipe several times now and it is great! I took it to the butcher when I slaughtered a pig to see if he would make some up for me and he says he loves it too and might start using it instead of his recipe. It's about the best I tried

Eastern North Carolina Barbeque Sauce

This is not your typical bbq sauce, it's tangy yet spicy. It is great on bbq pork roast. I grill alot and i tried it on my pork.... everybody raved over it

Ukrainian Meat Filled Cabbage Rolls

I've tried this recipe and it's really good but I've subsituted the groud pork with italian sausage and it turned goood into great!!! It doesn't matter your prefrence hot or sweet it's the bewst cabbage roll I've ever had (myself I've never been crazy about stuffed cabbage or cabbage rolls but this is worth a try)but the Italian sausage does provide a better flavor, in fact it puts it to a 6 out of 5 stars. BOCA® Breakfast Burritos

I did alot of subsituting on this , but it was great I use real eggs (1 egg to each tortillia) milk (or evaporated milk) your favorite cheese (mine is the pizza blend (cheddermozzorella mix) and since the kids don't like onions I use onion powderor salt also if you like substatute the sausage with ham, bacon hot dogs or any meat you like. I've been making this for the kids for years and they love it.(even before I saw this recipe). ENJOY!!!!

Smoked Pork Butt

this is a good recipe, I use my own rub/seasoning though equal parts of, onion powder, garlic powder, black pepper, red pepper, hungarian paprika, and 2 parts salt, (if you like it as a rub then add it to 1 cup brown sugar), but then again i use this seasoning on just about everything, also i don't have a good smoker so i use my gas grill and put mesquit chunks over flame side and meat on other side away from heat.... same basis

Smoked Turkey

I've been doing my meats like this for years, and turkey is best done this way (I usually rub the bird with butter then spinkle onion power, garlic powder, salt & peper on it or creol seasoning, it's great!)I've only had 1 bird turn out bad,{which was probably articqueen's problem too, not enough air flow and coals went out) other than that everything else was a hit. I don't have a smoke, so i use a barrel type smoker/grill and put my coals on one side and meats/birds on other to cook on indirrect heat, this way it'll never burn on the outside, but, nice and juicy on the inside. just make sure you have an accurate meat thermometer to insure you bird is done thouroughly 165 -180 degrees (f) no less and preferrably no more

Easy Garlic Broiled Chicken

I made this lastnight, AND IT WAS A HIT! though like most i did things a little differently. I used a purdue oven stuffer and split it into quarters, so I doubled up on the recipe, instead of the broiler (being the breast/wing 1/4 sat so high) I marinated the chicken in the mixture for a 1/2 an hr, then put it on a cast iron griddle/grill, grill side up and placed it in the oven turning every 5-10 mins basting with the remaining mixture for about 1 hr 20 mins (was a big bird). this is deffinately a keeper. Next time I'm going to try it on porkloin/porkchops and turkey fillets ( i like to buy whole turkeies and debone them and make fillets and nuggets). Would also make an awsome marinade for the grill. Easiest Peanut Butter Fudge

This is a very good fudge recipe, me and my wife made it, but being i'm newly diabetic, we put a diabetic's twist to it., I took the advice of the other reveiwers and used 2 cups of Ideal brown sugar substitute (Xylitol, maltodextrin, molasses, & sucralose) and 3 cups of Ideal confectionery sugar substitute (Xylitol, maltodextrin, corn starch, sucralose),and being xylitol does asorb liquids, I added a little extra milk (about 1-2 tsp). even diabetics can enjoy the good life without having that nasty tasting nutra-sweet/aspertame after taste. Thanks for the recipe!

Southern Sweet Potato Bread with Pecans

OMG this is awsome! Only thing I changed (because of being diabetic) I used UNBLEACHED all pourpose flour, and instead of white sugar, I used Xylitol plus 1 Tbls extra milk (xylitol has a tendency to absorb liquids in recipes(being new to the diabetic and Xylitol thing, i'm still playing with it, this time was PERFECT)THANK YOU!

Simple Chicken Brine

Wonderful base, leaves it open to add your own flare. Being I am a diabetic, I did however substitute the sugar for 2/3 cup of xylitol and added crushed garlic. I baked a whole chicken without anything further to see how it would turn out, I must say it was one of the juiciest tenderest chickens I had ever made. Definately a keeper. Next time I'll try it when I spark up the grill ;0)

Italian Seasoning II

Only difference is, I have fresh herbs growing outside and on my porch, the difference in flavor is like night and day. Plus sometimes I add a little grated Parm/Romano cheese mix to the seasoning. Awesome!

J's Horseradish Deviled Eggs

This has been my recipe for decades , minus the shallots and cilantro, I usually top them with cocktail shrimp, and make regular eggs for the ones that don't like horseradish, substituting it with sweet relish and top with a piece of bacon (the toppings are so everyone knows which is which ;) )
