these are amazing!! even my boyfriend, who isn't a big fan of coconut in general, thinks that these are delicious. they are simple, quick and beautiful little gems. i was a bit low on coconut - i only had 1 cup - so i was a bit worried that they wouldn't have a strong enough coconut flavour for my taste. i did, however, have coconut oil, so i substituted half of the butter with that. i think it added some more coconut flavour, and the change didn't seem to negatively affect the texture. i would recommend this substitution to anyone who wants to use a bit of healthier fat, or to amp up the coconut flavour here. i dropped them by the teaspoon, and cooked them 9-10 minutes, as per the recipe - and i actually got 36 cookies out of this recipe! they turned out chewy and moist on the inside, and slightly crisp on the outside - perfect! they rose nicely, making plump little morsels, creamy coloured with toasted edges, and lots of coconut flavour as well! thank you so much for this recipe - i will make these many times, i am sure!
