Cocoa Rum Balls

Perfection! I found the reviewer's comments helpful - throw wafers and some of the nuts into blender on low speed to pulverize quickly, chill at least three days for flavor/firmness, and DOUBLE the recipe - they won't last long! I had spiced rum and used 3/4 c rum + 1/4 c water (for the doubled recipe) because it wasn't "light" rum like the recipe called for, but I think I'll try 1 c full strength next time. I used walnuts and reserved half of the amount to chop to give the balls a little texture. This recipe is now in my permanent collection. YUM!

Brown Rice Black Bean Burrito

Yummy and so readily customized as shown by the comments. We add guacamole and after dinner just sit around with our full tummies!

Unsloppy Joes

I think this recipe is fab. I've made it for a few years now and it makes a great base - I put spices out and let everyone make it as spicy or hot as they want. Cheap, nutritious, filling. Great for a cold autumn or winter evening!

Jazzy Green Bean Casserole

So yummy! We devoured it tonight. The only change I made was that I used a 16 oz defrosted bag of frozen green beans instead of canned. I tried to get the lowest sodium cans of ingredients to keep it as healthy as possible. This has entered a permanent position in our meal rotation!

Ginger Veggie Stir-Fry
