Caramel Apple Pork Chops

We absolutely love this as a sweet treat dinner once in a while. I triple the apple/caramel mixture so my 3 boys and I have enough apples and sauce to go around. I don't put the chops in the oven, just put them on a plate on the stove with a pan lid to keep them warm. I usually cut up the chops, since my boys are too young for knives, and make a rice and veggie mixture in my rice steamer and top that with the chops and apples. They gobble it all up with no leftovers and I've snuck in a serving of veggies to boot!

Grandma's Secret Pie Crust

I tossed out all my other basic pie crust recipes! This one is perfect everytime! I put only small portions of the liquid mix into the pastry mix at a time, stopping when it is the perfect consistency.

Potato Pancakes II

These were yummy! I had to add a little flour to my potatoes because they were too loose. After that they fried very well. I will make them next time with garlic mashed potatoes and then I think they will be smashing!!

Cod au Gratin

Yum! I substituted healthier butter for margarine and deleted salt. I added fresh ground nutmeg (maybe 1/8 tsp) to the white sauce. My picky husband even went back for thirds! My son, who is not a fish eater even gobbled it up!
