Cajun Crawfish and Shrimp Etouffe

Great recipe on its own and easy to modify. Last time I left out green peppers and celery (didn't have 'em) and substituted 1 can of chopped tomatoes and green chilies (again, its what I had). Dish was still terrific and gone in no time. Best advice, don't skip on the roux. Do it exactly as written.

Pepperoncini Beef

OMG...what a great recipe! Ran out of pepperonconis so had to substitute a 16 oz jar of Hot Giardiniera instead. Family just went wild! Served on wheat hoagies with provalone cheese gently toasted on top. Cannot wait to try it with the pepperonconis to compare tastes.

Alternative Baked Salmon

Yummy! Taste tested the mayo/crumb topping and geared the seasonings towards my family's taste and it was perfect.

Capers and Halibut

Yummy! Didn't have any halibut so I used salmon steaks instead, was quick, easy and my hubby and 11 yr old son couldn't get enough.

Creamy Swiss Chicken

Yummy! Easy to do and uses ingrediants I usually have on hand. Hubby raved and I enjoyed it as well. I didn't need to change a thing, it is perfect as is.
