Sooo good! We usually make two, side-by-side in a turkey roasting pan... You can get two chicks at Costco for decent price! Soo much better than store bought rotisserie chicken! We will have one for dinner, and the other, I remove the meat from it and use it for enchiladas or another chicken dish later in the week.... (if the second chicken lasts that long!! :+)

Tortellini Soup I

OH MY GOSH! This is the BEST soup! We all loved it, even the kids.... I made a couple of modifications, because of what I had on hand... instead of sausage, I used ground beef... instead of beef broth I used chicken... and omitted the red wine and instead added a tablespoon or so of Worchestershire sauce. YUMMY STUFF!

Herbed Chicken and Fettuccini

I used milk instead of chicken broth - yummy! Also, used "kid friendly" pasta - fun shape & easier to eat! This will be a "staple" at our home! Quick, easy & yummy!

Beer Cheese Pretzel and Dip

YUMMY! I forgot to put the yeast in from the hot-roll mix the first time... grrrr. The dip is awesome and would be great for other "dippers" too!

Red Enchilada Sauce

I started a recipe that needed a can of enchilada sauce, but my cupboard was bare! I whipped up this quick recipe and - - to our amazement, my family loved my dinner better than if I used canned! Super recipe!
