Pumpkin Chocolate Chip Cookies III

This is not a cookie you want to eat right out of the oven. It is much, much better after being in the refrigerator. We made a batch with pumpkin puree and it turned out great. Believe it or not, from a chocoholic, I will put in fewer chocolate chips next time and it was too overwhelming for the cookies as is. GREAT RECIPE - husband approved!

Catfish Pecan

Wonderful way to prepare fresh catfish. My husband and children agree that this recipe is a keeper. Next time I will crush 1/2 of the pecans and put it in with the cornmeal coating and then sprinkle the rest on 5 minutes before the fish is finished baking that way the pecan flavor is uniform throughout the filets.

Tuscan Bean Salad

This is just what we needed! My husband, a summer salad fan, loved it! I did not have Dijon mustard so I substituted yellow mustard and horseradish in about the same amount and it turned out great! If you can, you do want to let marinate a few hours. However, in the case in my home, it did not get a chance before it was consumed!

Unbelievable Fish Batter

For a non-fryer that I am this recipe is GREAT with the change to 1/4 TSP baking powder. I sprinkled low-quality pollock with a spicy salt and let it set for about an hour before coating and frying in coconut oil. My children and I think this one is definately a keeper!
