Breakfast Casserole

Reviewed: Apr. 22, 2003
I live in Iceland and cannot get hashbrown potatoes, so I substituted a locally available kind of diced potatoes, and this recipe is always a hit wherever it appears. I have been asked for the recipe several times. Instead of potato chips I use crushed Ritz crackers and then sprinkle crumbled bacon over the top. Everyone loves it.

Grandma's Pumpkin Tea Bread

Reviewed: Apr. 21, 2004
This is a great bread/cake, and I sometimes substitute boiled sweet potatoes for pumpkin, in the same amount. I also use only one and a half cups of sugar and leave out the mace and butter-flavor extract entirely, as I cannot get either of those ingredients. This recipe makes a great spice bread that stays moist in an air-tight container. Everyone who has tasted it loves it.

Ye Ole Gingerbread

Reviewed: Jun. 30, 2004
I tried this recipe yesterday the bread is exactly what I was hoping for. It is moist and firm, holding together when sliced and even when buttered. I did use two tablespoons of ginger instead of the recommended one, but that was the only change I made to the recipe. It rose beautifully in the bread pan and makes a fine big loaf. I won't look any farther than this for a gingerbread recipe. This is first-rate!!

Scrumptious Sweet Potato Casserole

Reviewed: Feb. 2, 2005
This recipe is GREAT, but I cut back drastically on the white sugar and on the brown sugar topping. I converted the recipe to metric and scaled it for 12 people. Given that, the recipe called for 175 grams of sugar; I used only 40 grams and it was just right. As for the topping, I just add a light sprinkle of the brown sugar-and-butter mixture over the top of the casserole before baking, just enough to flavor it, and I omit the pecans all together. This is always a big hit whenever I serve it to my friends here in Iceland.

Cheese Pennies

Reviewed: Aug. 25, 2005
This recipe sounded good, but the result was a disaster!! The butter makes them far too greasy, and the taste of the onion soup mix is OVERPOWERING. I ended up throwing the whole batch into the trash. Don't waste your time on this.

Jennifer's Granola

Reviewed: Jan. 11, 2009
It seems that most reviews that appear at this site are really ADAPTATIONS of recipes. I find very few reviews that reflect the recipes exactly as they are presented, so let me state that I made this granola with no adaptations or substitutions. Having said that, I think this granola tastes good, but it is soggy, and what disappointed me most is the fact that the granola doesn't hold together in clumps. It is very loose and is best eaten with a spoon. The taste is good, but I wish it were more like the store-bought granola that is so readily available.
