Turkey Bean Soup

I was looking for a healthy soup to make with what I had on hand (a bag of 15 bean mix, a pound of turkey, some bacon, an onion and some frozen green chiles). This recipe did the trick. I did add a couple of slices of chopped bacon to the turkey and sauteed an onion in that. I omitted the celery because I didn't have any, only used half an onion, and used 3 roasted hatch chiles because I have a ton in my freezer! I also only had maybe a cup of frozen corn, so I added more beans instead. The soup turned out wonderfully hardy and just spicy enough. Definitley a keeper!

Sam's Famous Carrot Cake

I made this recipe as cupcakes and used Sprinkles cream cheese frosting - absolutely to die for! 8 oz cream cheese 4 oz butter 3 3/4 c. confectioner's sugar, sifted 1/2 tea. vanilla extract 1/8 tea. salt Cream the butter, cheese and salt in a stand mixer until light and fluffy. Gradually add the sugar until incorporated, then add the vanilla.

I attempted this in my blender - BIG mistake. It took forever, but the end result was pretty tasty. I'll keep looking for the 'perfect' recipe though.

Gramma's Apple Bread Pudding

This recipe is delicious! It is exactly like the bread pudding at a very popular and upscale Dallas restaurant. The only change I made was substituting walnuts for the rasins - just a personal preference.

Awesome Slow Cooker Pot Roast

I added onions, potatoes, celery and carrots. It was good! My cooker must be realllly slow though, because it wasn't 'falling apart' tender until the next morning - almost 20 hours later!

Spicy Slow Cooker Black Bean Soup

Great recipe - and so healthy! I threw in a can of diced tomatoes, half a diced yellow onion and half a green bell pepper, and two diced chicken breasts. I garnished with shredded cheese, sour cream and sliced avocado. It was a big hit with everyone. My only complaint was that the beans weren't soft enough. But that's my fault, as I didn't soak them over night - just for a few hours in the afternoon. I mistakenly thought that 6 hours simmering in chicken broth would get them tender enough. Not true! I guess it has something to do with cold water vs. hot? Will soak the full 12 hours next time.

Rempel Family Meatloaf

Delicious. I gave my boyfriend quite a scare when I told him I was trying a new meatloaf recipe, but after one bite he declared that this is now THE meatloaf recipe. Followed some other reccomendations - sifted the onion soup mix so it wouldn't be too salty and added probably half a cup of bread crumbs cause it looked too gooey to me. Also made the glaze out of honey, steak sauce, and ketchup. It turned out fabulous - will definitely keep making this one.
