Loved this recipe!! I added a red beans & black beans and halfed the black eyed peas,a little cooked orzo (instead of rice) and smoked turkey & andouille sausage as well as a little Cajun seasoning. Loved it! Husband loved it, too (he's not a big fan of any kind of beans, and he had to servings). Thank you for sharing this recipe!

Au Gratin Taco Bake

Reviewed: Nov. 10, 2008
This is an easy, tasty recipe and I will definately make this again! (Really nice on a cold fall night - comfort food). I substituted the corn with MexiCorn and added a bit of salsa. I adde my own taco seasoning because I find packaged stuff is too salty. The Au Gratin potatoes are always a little over salty, so try to use un-salted items. My husband and I really like this recipe. Thank you so much for sharing it.

Crustless Cheese Quiche

Reviewed: May 12, 2008
I love this recipe because you can add anything to it and it tastes great. Easy to make, and the left overs are easy to microwave for a quick breakfast. I've made this twice now - used low fat bisquick, LF cheese and LF milk and one tablespoon of smart start instead of the butter.
