Chewy Peanut Butter Chocolate Chip Cookies

I was looking for a peanut butter cookie recipe to use up some peanut butter. Also wanted to add chocolate chips. Found this recipe and it was exactly what I was looking for. Followed exactly except doubled it. The cookies were great but the chocolate chips overpowered the peanut butter - not a problem, just wanted to use up some peanut butter. As for the baking time, I cooked them at 375 per instructions. I noticed in reviews a lot of comments on the time. I guess I have just been cooking long enough to know that all ovens are not created equal. I also baked two sheets at the same time. Some of them took up to 14 minutes, and others only 10. Not a problem, just rotated one sheet out and one sheet up with the newest cookie sheet going on the bottom shelf. The cookies came out just perfect and nice and chewy. Just as described.

Oven Pot Roast

Used a 3lb chuck roast cooked 3 hrs. Used burgundy wine, my favorite for pot roasts and stew. Rest of preparation was as stated in recipe. Roast was falling apart when I removed it from pot. Had to leave so I removed roast from pan, threw in potatos, carrots & celery. Returned covered pot to oven but turned oven off. Oh, I also added 2 cups of water to thin out soup mixture left in pot. Returned home to perfectly cooked veggies. Haven't eatten it yet but sampled. It was very tasty and can't wait to serve tomorrow night.

Balsamic Roasted Pork Loin

Wow! Marinated over night - excellent flavor. Balsamic vinegar barely noticeable other than slight scent while cooking. Happy I found this recipe.

Simple Beef Pot Roast

I have been making pot roast for MANY years yet I am still always searching for a different way to season it. Well, I have finally found the ONLY WAY I will ever make it again. I made it EXACTLY as written and couldn't have been more pleased. When we were through with dinner there were still vegetables and liquid in the bottom of the pot so I added a cup of water and some flour and made gravy that I used last night when I made hot roast beef sandwiches with the leftover beef.

Sesame Pasta Chicken Salad

Just ate this for dinner. Very good. When I started out I also cut the oil in half and used olive oil instead. The rice vinegar I had was seasoned so I cut out the sugar. It didn't taste the way I had hoped so I went out & bought the plain rice vinegar. Added 1/3 cup and it was perfect - still without the added sugar. I added some sliced almonds and that was it. Very nice, cool dinner.

Pennsylvania Coal Region Barbecue

If you are expecting something spectacular this recipe isn't for you. Has a nice flavor, is quick and easy. I used the instructions to get it started but then put it in the slow cooker for the flavors to meld all day. Just couldn't get the nice dark color in the photo. Nice reminder that a good meal doesn't need to be complicated.

Spanish Rice Bake

Made this for dinner last night - YUMMY! After reading other reviews & based on what I had on hand I used fire roasted tomatoes instead of plain tomatos. Did not have chili sauce so I used a can of tomatos with chilis. Did not add the brown sugar...do not care for this kind of meal being sweet. One other thing, did not put in the oven. At end put cheese on top and covered it until it melted. Just the kind of meal I like (had 2 servings)
