Buttery Spritz Cookies

Perfect. I added an additional teaspoon of vanilla and teaspoon and a half of almond extract- yum. They turned out perfectly! I've always been afraid of my cookie press, no longer!! The dough is really easy to work with too, no need to chill. If you unsure as to how to use your cookie press, there are wonderful tutorials on youtube!

The Best Meatballs

Delicious- add more garlic, more parsley, and 1/3 cup less olive oil. You will have flavorful, light meatballs that aren't swimming in oil after they are baked. This recipe also works with only turkey meat- good in escarole soup too.

Apple Pie by Grandma Ople

Wow. With the fear that I'd end up with a soupy pie, I, like other bakers, added 1 tbsp of cornstarch and an extra tbsp of flour to the simmering mixture. I also added 2 tsp cinnamon and 1/2 tsp nutmeg- which turned the syrup a darker color- don't be alarmed. I poured half of the syrup mixture over the apples, and half over the lattice work to avoid the syrup spilling over the pie plate. Like other bakers, I was concerned that the syrup was too thick and was absolutely deflated when I put the pie in the oven. The syrup does thin and melt in the oven and work its way into the lattice work. Although, I waited a little over a minute after the syrup was done simmering before I poured it, which accounts for the thickening as well. It's a gorgeous pie, smelled amazing, and was probably the best apple pie I've ever made.

Chocolate Crinkles II

Don't freak out after you mix your ingredients, you wind up with a batter- you did nothing wrong! The batter will harden to a dough-like consistency after a few hours, coat your fingers with powdered sugar when you roll the little balls to minimize how much the dough sticks to your fingers.

Jamie's Minestrone

Absolutely delicious. I accidentally picked up white cannellini beans instead of red- worked fine. Added potatoes, kale, and a bay leaf. Substituted 1 bunch parsley (no stems!) for the oregano and basil as the tomato sauce I used had oregano and basil already. I also added a couple of chicken thighs with the skins for extra flavor. It's a pretty incredible soup, and the author gives us a wonderful base.
