Almond Crunch

Incredible! My husband loves it so much that he had me make gifts of it for 15 people at work for Christmas! The only thing I would change about the original recipe is to stir the mixture frequently after it boils. The first time I made it, I did not stir it after it began to boil...but it burned (my husband still ate the entire batch). I halved the amount of chocolate chips on top and the amount of chocolate was fine. I agree with another reviewer who suggested to put sliced almonds on top of the chocolate (and press down lightly with a spatula so they stick better). It made the presentation much prettier. Thank you - this recipe will be a keeper!

Quick Chicken Mole

!Que bueno! My husband is a huge fan of mole. I've tried several recipes, but none were a hit with him or compared with restaurant moles. He LOVES this recipe. The only changes I would make next time would be to cut the amount of almonds in half and 1 less TBS of chili pepper flakes. I baked the chicken with the sauce (instead of doing it in the microwave) and served it over sticky white rice. This is a huge time saver from the recipes that take hours to prepare...and we like the taste of this one MUCH better. Thank you!!

Italian Ties

Thank you for posting this recipe! My italian grandmother used to make these every Christmas and (although I don't know the spelling) called them "sko-wheelies". She tied them differently, however. Take the rectangular piece of rolled out dough and make a cut down the center (leaving about an inch or more uncut at each end). Then take one end and put it through the center cut to the other side so that it looks twisted in the middle. She also used a pasta machine to flatten out the dough (since she made it in mass quantities!).

Chocolate Zucchini Bread I

Great recipe! I made a few changes based on healthier substitutions and a veggie-hater 7 year old: Reduce oil to 1/2 C. and use olive oil instead. Add 1/2 c. applesauce. I peeled the zucchini and then pureed it, and just drained the little bit of liquid after it sat for a minute (I puree it so that my son can't detect the little pieces of zucchini throughout the bread). Add 1/4 C. cocoa powder for a deeper chocolate color and flavor. This bread comes out very moist. I baked 5 mini loaves for 40 mins. I followed the advice of other reviewers and lined the bottoms of the pans with parchment paper. My son calls this his favorite chocolate cake!

Quick Asian Beef Noodle Soup

This soup is very tasty! The only changes I made were the following: I sauteed the beef with the onion and garlic before adding them to the soup. Instead of the ramen and the spice packets (because of the fat content of the ramen), I used the soft Asian noodles found near won ton wrappers in the store, and used beef broth instead of water and I doubled the amount. I also cut the soy sauce in half since the beef broth had salt.

G's Flank Steak Marinade

WOW! I made this for a large BBQ crowd and everyone raved about it! I used petite sirloin, marinated for 2 days and cooked it on the grill. I boiled the leftover marinade and served it on the side. The steak went very well with Jamie's Cranberry Spinach Salad and Mushroom Rice (needed to be spiced up a bit) from this site. Thank you - it's definitely a keeper!

Incredible! I served this at a BBQ and people wouldn't stop talking about how delicious it was! I did take other reviewers' advice and added the sesame seeds & almonds at the very end. Thanks for sharing!

Zucchini Brownies

WOW! Very rich and moist. Some reviewers commented that the batter was dry and that the finished product was cake-like. I didn't have that result...probably because I pureed the zucchini, and then added the salt to it. The batter was perfect brownie batter consistency. Based on other reviewers' comments, I made the following changes: 1/4 C. olive oil & 1/4 C. applesauce, whole wheat flour instead of white, and used half white sugar and half brown sugar. I also added a handful of chocolate chips. It was great, even without icing!

Alaska Salmon Bake with Pecan Crunch Coating

This is awesome! I substitute olive oil for the butter. The coating freezes well - I quadruple the coating, divide it, and freeze it in zip locs to save time for future meals.

Black Bean Avocado Salad

This is awesome! Due to personal preference, I omitted the corn, added finely chopped red onion, and exchanged the fresh jalapeno for a huge spoonful of canned diced jalapenos. Thanks!
