Stuffed French Toast II

Reviewed: Oct. 14, 2012
Awesome base recipe, especially using the oatnut bread: perfect amount of crunch and substance for an otherwise decadent breakfast! I substituted fatfree sour cream with lemon zest, cinnamon, stevia, and nutmeg for the filling and opted for fresh fruit on the side rather than the jam. I also left out the almond extract, but only bc my husband isn't a fan. I've tried a few different toast "stuffing" techniques that all turned out kind of ugly and messy... this one is the SIMPLEST and most successful solution! SANDWICH! DUH! Why didn't I think of that?!

Cabbage Burgers

Reviewed: Oct. 4, 2012
i decided to make these after winding up with a ton of leftover cabbage from another recipe... turns out the are SOOOO much better than i thought they'd be! hearty and tasty: perfect for a chilly autmn evening or football nights! my only recipe changes were to add a nice handful of shredded carrots and to brush EVOO on BEFORE baking, along with a generous sprinkle of sea salt and cracked black pepper (gave a nice toasted-bagel crust/finish!). hubby loved em, too!

Cheesecake Brownies

Reviewed: Oct. 4, 2012
SO EASY! SO DELISH! my husband nearly DIED when he came home from his third shift job to find that i'd left these treats on the stove for him... i added about a tablespoon of lemon juice and a table spoon of vanilla to the cream cheese mixture, and substituted a half cup of stevia for the cup of sugar. i also baked mine in a 10inch casserole/pie plate, so they were on the thick side and took closer to 45 minutes of baking time. they were GORGEOUS and SCRUMPTIOUS! will definitely be making these gems again!

Spinach Stuffed Chicken Breast

Reviewed: Apr. 10, 2012
awesome solution for dressing up 'everyday chicken' and super easy! i substituted the sour cream for two whole eggs and the bacon for turkey bacon, but it was DELICIOUS and a new favorite for the fam.

Oatmeal Raisin Cookies I

Reviewed: Mar. 6, 2012
great basic recipie! I substitued 1/4 cup of butter for coconut oil, though, and added almost a cup of chopped walnuts. I dont know why so many people had issues with their cookies running (maybe an altitude issue or something?)... mine came out perfect and delish!
