With some modifications I'd give this recipe a five stars. I stewed fresh chopped tomatoes (15-20 mins) in chicken broth added a large onion (minced), green peppers (minced), dried oregano, minced garlic, fresh cilantro, sour cream, hot pepper (pepper jack) cheese, a little sharp cheddar cheese, a dash of salt and pepper. (Sorry, I don't measure, just go by taste). Added the cooked chicken and let it simmer about 15 minutes. Served over rice and it was divine. Huge hit and very flavorful.
