Chicken Cacciatore

With some modifications I'd give this recipe a five stars. I stewed fresh chopped tomatoes (15-20 mins) in chicken broth added a large onion (minced), green peppers (minced), dried oregano, minced garlic, fresh cilantro, sour cream, hot pepper (pepper jack) cheese, a little sharp cheddar cheese, a dash of salt and pepper. (Sorry, I don't measure, just go by taste). Added the cooked chicken and let it simmer about 15 minutes. Served over rice and it was divine. Huge hit and very flavorful.

Feta and Turkey Stuffed Green Peppers

This was surprisingly wonderful and a big hit. I was nervous to add the BBQ sauce, but it made the flavor really delicious. I used chicken broth instead of water, left out the fennel and used fresh tomatoes instead of canned. I also added a 1/3 cup of quinoa, which in hind site wasn't necessary. I particularly liked that the peppers weren't par boiled first. They were cooked perfectly. I also added I little more feta to the top and only cooked for 30 mins. Served with steamed broccoli and a fresh garden salad. Divine! Great recipe, I will definitely be making again.

Grilled Zucchini Pizza

First, I buttered a 9x12 baking dish. I lightly buttered both sides of the zucchini rounds. Spooned on pizza sauce and topped with pepperjack cheese (I didn't have mozzarella), it gave a nice little spice. I baked for 25 minutes at 350 degrees. I served with green beans and a garden salad. This meal was divine and I will be making them again, as they were a huge hit.
