Speedy Three-Bean Salad — Oh She Glows

Really good. Honestly, I like the flavor on its own better the first day, but maybe something was off with my ingredients. Also, fabulous on a salad with greens. This will make any green salad amazing, no need for other dressing. Yum. (I used canned beans, btw)

Salmon with Dill

LOVED this. Ridiculously easy & fast. Made with fresh salmon rather than frozen. Baked 17 min & it was perfect. Did use butter & also only had onion salt. Didn't use foil, but it was still very moist & good. Also, I made the serving for 1, which changed the salt to pepper ratio. Still completely fantastic, easy, and didn't ask for any ingredients I didn't have, which is a plus. Going in the vault! :) Thank you!

Fluffy Pancakes

These were really great pancakes & fluffy as promised. No leftovers! I wanted to give it 4 1/2 but even though the consistency was just right, I felt like they were just a little bland, maybe missing something to make it the perfect recipe. Will probably try again sometime but with a little vanilla, lemon or brandy extract.

LOVED this. Next time I will try whole mint leaves or finely chopped, as they were a bit stringy. I don't have a salad spinner, but I don't think that made a difference. Wonderful flavor, healthy, & energy-giving. A keeper. I did add a smidgen of cayenne pepper to the vinaigrette because I like things spicy.

Juicy Thanksgiving Turkey

My 1st turkey. was beautiful. Very Moist. only problem was my vegetables didn't roast well, so they weren't as tasty as I thought they would be & I ended up tossing them. I used fresh herbs & about tripled but can't taste them (or anything else so much really... the flavoring was really subtle. my turkey was 20 lbs though. so maybe that affected things) I probably should have used dried or rubbed them under the skin. (but I tend to like my food spicy or strongly flavored. not the recipe's fault) plus I didn't follow it to a T. the 5 stars were because it was SO easy, almost no maintenance and it was still really wonderful. Prettiest one I've seen in person, like out of a magazine.

Green Beans with Cherry Tomatoes

Terrific flavor. Used basil from my garden, freshly ground pepper & had grape tomatoes left whole. My favorite green bean recipe so far. (I did leave the green beans longer in the skillet & added more water as needed to try to soften them up more. I cook for my grandparents who are used to canned only... & I'm trying to make them work with their teeth... but so far no luck). They were outstanding as they were & would have been even better crisper! Yum! I did put a touch less sugar than a whole TB, maybe 3/4 of one. I'll probably ease it down to see how little I can put it & still have it be awesome. =)

Chocolate Truffle Cookies

Changes I made, since I use what I have on hand: used 1 bar very good bittersweet chocolate. & 1 bar of Lindt 70% cocoa, all cut into chip-sized chunks & 3/4 cups semi-sweet chocolate chips. Also, the cocoa was sweetened. I added probably 1 TB or 2 extra of sugar to make up for it. I had NO problem with the cookies not being sweet enough. Very indulgent & very good. Has wonderful chocolate taste, unlike most "chocolate" cookies without much flavor. Even altered, I wouldn't hesitate to gift these! Yum. Also, the crackle was just like the picture. Perfect. Very pretty.

Baked Pumpkin Bread

I often have changed recipes around per other reviewers suggestions & had nothing but success. I wish I could have written this review without rating it. I gave it 4 stars since most people said they had to add extra spice ... & it it wasn't the recipe's fault that I had to throw it out. It was mine. I increased the pumpkin & the spices. Other than that, I added more spice, 1 tsp vanilla extract & a generous amount of pecans & raisins. The batter tasted pretty good I highly recommend being very careful altering this recipe if you, like me, are not a very experienced cook. Mine was a gooey mess. By the time it cooked the top & sides were burnt & it tasted terrible. I really should've stuck to the program on this one.

Pumpkin Sage Biscuits (Runaway Spoon)

The only reason I didn't give these a 5 is that I expect a little more flavor/punch. I would like to experiment with adding more pumpkin, but I'm afraid that would interfere with the baking texture which was very good. I will probably add more sage next time. These were heavenly when I experimented with adding a little honey & cinnamon on top. Seemed like it brought out the pumpkin taste.

Dawn's Kale Side Dish

1st time I have cooked kale! My grandma, who said she hated kale & is extremely finicky about food ate her whole plateful & said she liked it. (She really won't eat it if she doesn't!) My grandpa liked it so much he took my bowl when I had my backed turned to take the cornbread of the oven! :) No leftovers! Changes: Unless you buy raw cashews, they are roasted. I had some & used them. I bet this would be even better with freshly roasted cashews. Wow. I I had used a little of the bunch of kale for another recipe. I tried to cut a bit from the center, places that looked tougher. I used a bag of baby spinach minus a little, since that is what I had. I used a medium sized shallot since that is what I had (& I'm not as crazy about onions) I used 3 garlic cloves, because I had fewer greens & I tend to find garlic overpowering. This was just right for me, though most people I know would probably be happy with the whole amount. I will probably try 4 if I have the proper amounts. Also, unfortunately I only had black pepper instead of white. It was still wonderful. I made this with "Grandmother's Buttermilk Cornbread" & ham for an easy, quick dinner.

Grandmother's Buttermilk Cornbread

Lovely, simple, on the sweet side, which is my preference. Not try. Very little work. Perfect crust. The last cornbread recipe I'll need. (served it with ham & "Dawn's Kale Side Dish" & everything was just right together and super-easy.... ALSO, I put the batter in prepared pan in the fridge 3-4 hours ahead of time & it still came out fantastic. (I let it warm to room temp. before baking.)

Cranberry Pumpkin Muffins

LOVED these muffins. Felt like domestic goddess after making them. Took suggestions of others. Nearly, but didn't quite double all spices except for cloves. Added almost entire 10oz package of dried cranberries & soaked in hot h20 to plump them. Added loads of chopped pecans. Baked @ 350 for 20-25 minutes, but they weren't done & took much longer. Next time I will probably follow original baking temperature & time but watch closely. As I made them they were lovely, flavorful (and I HATE bland food), moist & quite filling. Next time, I am hoping to try with whole wheat flour & see if it is still as good. THANKS for posting this!!! :)

Summer Squash Casserole - Runaway Spoon

The only changes I made: 1. the crackers looked dry to me so I added a few dabs of butter on the top. 2. I am a very new cook & did not manage to cook the onions to make them translucent without browning. I don't know if I will ever get the hang of that. They were kind of a crispy texture & I cannot stand that since I'm picky about onions, so I left them out 3. Once I made a zucchini recipe by the book but it was so watery it was disgusting so, just to be on the safe side, I laid the squash out on paper towels just in case to help get any extra moisture out after I took them off the stove top & put them through the colander & shook them out. Pros- Easy & it turned out just how it should. I made it for my VERY picky grandparents & both of them loved it & ate it. Kids would probably like this, too. You can make it ahead of time. I did this- very helpful & it still turned out great. Tasty. Good comfort food. Cons- I probably will use fewer Ritz crackers next time. I'm kind of a health nut, so the guilt factor was pretty intense here. Tip- I would make this with something light, because it is more filling than it would appear. I served it with chicken, but I think a white fish or bean dish might have been more suitable. It's almost midnight & I feel like someone should be rolling me to bed! haha NOT the recipe's fault! Update: Leftovers made a remarkably good brunch when I added cinnamon & a tiny dash of sugar before I reheated it.
