This is the first time I made meatloaf. It was quite enjoyable however I was concerned that it would be too much meat so I sauteed onions, garlic, chopped zucchini and red pepper and added it to the meat mixture. We made our own sauce since the one provided didn't appeal to me.I added the sauce after a half hour and let the meat cook for about 1and a half hours. It was very moist and this allowed the sauce to really marinate the meat. Will definitely do this again and possibly with more veggies the next time since I know that the meat will not crumble.
