Cheesy Creamed Spinach

Reviewed: Feb. 17, 2013
Simply for the reason of cutting back on calories I used less cream, otherwise followed recipe exactly. This was amazing, I am looking forward to making it again! I have added this to our Easter menu.

Green Olive Chicken II

Reviewed: Feb. 25, 2011
This was a nice change. I was a little cautious with the thought of green olives cooked in a main dish, yet the flavors blended perfectly.

Vickie's Beer Bread

Reviewed: Sep. 1, 2009
Absolutely delicious! This is my go to recipe for Beer Bread. I love the crisp crust that forms, but make sure you eat it the first day it's baked...the crisp crust won't be there the second day!

Mushroom Beef Patties

Reviewed: Sep. 1, 2009
Great base recipe, but I thought a little bland for my taste. I will happily try these again only with the addition of some lipton onion soup mix added into the beef mixture.

Baked Oatmeal II

Reviewed: Aug. 17, 2009
I took the advice of other reviewers and cut back on the sugar, using 1/4 brown sugar, 1/4 brown sugar splenda. I also cut the amount of butter in half and used applesauce in place of the remainging half. I added choc chips. It was delicious! Next time I will add coconut & nuts. The variations are endless. Great way to start the day!

Zucchini Brownies

Reviewed: Aug. 12, 2009
Delicious! So easy to make & perfect results! At first I thought I had omitted something due to the dryness of the batter. I actually came back to my computer & read some reviews to make sure it was supposed to be that way. Just as others stated the batter will be dry, but the zucchini will make it moist. They were wonderflly moist & delicious, I can't wait for more zucchini to make this again!

Peanut Butter Apple Dip

Reviewed: May 17, 2009
Yum! I did as other reviewers suggested and added extra milk to have a smooth, creamy dip. I recommend making this a day ahead as it tastes much better the next day. I took this to a party and it was cleaned out, I had many requests for the recipe.

Blackberry Cobbler

Reviewed: May 16, 2009
I gave this 5 stars, yet I did make a few changes. I only had 1/2 the amount of fresh berries on hand so I halved the other ingredients and used a 10" pie plate. I cut back on the amount of butter to 3 TBLS. I also prayed the pie plate with non stick spray then added the berries with a little sugar over them. I mixed the remaining ingredients in a bowl and poured over top of the berries. This was delicious! I can't wait to try it with other berries as well! I will stick with making it in a pie plate unless it is for a crowd, then the bigger version wil be essential, this is so good!!!

Chewy Granola Bars

Reviewed: Mar. 9, 2009
My family loves these. I used a little less oats, and added coconut in it's place. I also cut back on the amount of butter and increased the honey a little to make up the differene. I packed it into the pan as firmly as possible then immediately after removing from oven I took a spatcula and pack it down again-it did puff up a little while it baked, but after smashing it back down to look like a granola bar, it was perfect! They cut into bars easy and kept there shape. My hubby requests that I add peanut butter to it next time. Yum, I will try that and update my review!
