Super easy - family loved it! I meant to halve the recipe and accidentally put a full portion of butter in the mix...tried to 'correct' my mistake by being generous with the sour cream and cheese as well...ended up with a very creamy scalloped potatoes which my husband loved! Will make again!

Mom's Zucchini Pancakes

Substituted zucchini with patty pan squash...and green onion with white onion (both were what we had on hand) - turned out great! Will definitely make again.

Chicken Enchiladas II

Huge hit with the family - had yellow onion to use up so used that instead of green..and used fresh, minced onion instead of garlic powder...awesome!

Brown Sugar Smokies

BIG hit at our Superbowl party - I found, as other reviewers indicated, that I had to broil them in the end because the bacon wouldn't cook all the way through. I also used thick cut bacon..d.e.l.i.c.i.o.u.s!
