Pfeffernusse Cookies

I wanted to try a new cookie- and I LOVE the gingersnap recipe my family uses. These cookies were terrible. I have decided I absolutely HATE cardamom. Way too overpowering of a flavor in these cookies. Maybe if that ingredient was omitted, they would have been good. I will never make these again. However- I have never had pfeffernusse cookies before, so maybe the cardamom is the flavor one would be looking for in this type of cookie… this was not a good one for our family though.

Maria's Mexican Rice

Excellent rice. Just what I was looking for. None of the flavors were over powering. I hate when people change the recipe and rate it, but this time I did make one change. I wanted a little more rice so I added an additional 1/2 cup. Next time, I would do the same, and the only other tip would be to lessen the amount of salt. I would cut the salt in half. I don't think it needed that much, and I'd rather add more salt, if desired, at the end, because you certainly can't take it out then. Yummy, the whole family loved it.

Peanut Butter Noodles

I did not care for this recipe. I have never given anything this bad of a review. It was everything from the texture of the sauce to the overwhelming ginger flavor… and this was after I cut back on the amount of ginger because I was fearful it would be too strong. Followed directions exactly, looked just like the photo, but the only flavors were peanut butter and ginger. Really disappointed because I love making Asian inspired dishes and was hoping this would be a keeper.

Chef John's Quiche Lorraine

Requested by my daughter, I decided to give this one a try. Definitely watch the video… many helpful hints. Don't overcook your bacon. I turned my oven up a bit because it took longer to cook. This turned out perfectly. I didn't have the fresh thyme so I omitted it, and I didn't miss it. My mother had this for leftovers the next day and pronounced it the best quiche she has had in 60 years… then she said she must have the recipe!

Spicy Korean Slow Cooked Chicken (Dhak Dori Tang)

Very good, quick and simple meal that I will make again. As the description stated, this one is very spicy. I cut back a little on the crushed red pepper flakes, and I did not have the Korean hot pepper paste but used the hunan red chili sauce that I had instead. Also, I knew I would want sticky rice with this dish (in my opinion you must eat this with rice) so I omitted the potatoes and threw in some celery. I just didn't see us eating potatoes and rice. Very good.

Peanut Butter Chicken Skewers

Okay, this is the one I've been looking for. I've wanted a really good thai type of peanut sauce for chicken… similar to chicken satay. This is it! Delicious I followed the recipe exactly. Very easy. For others who thought the sauce was too thick, I think just heating it on the stove until the ingredients blend is the key. Don't overcook the sauce. What I love best about this recipe is there is no need for marinating. Also, none of the flavors are overpowering. You get the salty with a hint of sweet from the brown sugar, the heat from the peppers and the just-right amount of peanut flavor. This is a keeper.

Lemonade

This is as simple as it gets. I read several reviews, and the idea of making a simple syrup is ridiculous. The sugar dissolve just fine in the water and with the lemon juice. Because lemons vary so much in size, just taste the darn thing to see if it needs more tang or more sweetness. I always add lemon zest too. This brings out the flavor of the lemon without having to cut into more fresh lemons. Also, it's fine to add lemon juice that isn't freshly squeezed if you think it needs more. We really enjoyed this, very refreshing and super simple.

Spinach and Strawberry Salad

I made this salad for Easter, and I won't make it again. A few people really liked it, but I felt it was too oily. I prefer using olive oil, and the vegetable oil was bland. This was just a sweet oily dressing without much else. Not bad, just not great. I followed directions exactly… I don't like changing recipes and then reviewing them. I can't recommend this one.

Scrumptious! One of the best butter cookies, the almond flavor is not overpowering and the recipe is as basic and easy as can be. Don't change a thing. They are fabulous exactly as posted.

Buttery Soft Pretzels

Excellent recipe! If you have a bread machine.... use it! I cut the recipe in half to fit my bread machine. I placed all liquid ingredients first, then all dry ingredients. Put the machine on the dough cycle and let it do all the work. No need to proof the yeast. Very simple. Then I followed the rest of the directions on the recipe for forming the pretzels. Next time, I would just dip the tops of the pretzels in the baking soda mixture... I think that the bottoms got a little too brown because I dunked the whole pretzel.
