Quinoa with Asian Flavors

This is the go-to Quinoa recipe!!! I have tried probably a dozen quinoa recipes and this is hands down my favorite. The ginger and the soy sauce beautifully complement the flavor of the quinoa! You must use fresh ginger! If you have more than one type of quinoa available to you I recommend using the common lighter colored quinoa (looks off-white). We have a local farmer who grows multiple varieties so I mix 3/4 white quinoa and 1/4 red quinoa. The white absorbs the flavors better the red gives it a nice crunchy texture. If you buy it in the store, the red quinoa will not absorb the flavors as well.

Roasted Carrot Salad

Carrots and arugula are in season at the same time. I buy both at the local farmers market and roast the carrots and nuts on a cast iron griddle on the grill (I hate to turn on the oven with the a/c going). The carrots must be browned to bring out their sweetness to best compliment the flavors of this salad. I look forward to making this every year in late spring! I love blue cheese and don't change a thing in the recipe!

Olive Cheese Bread

I followed the suggestion of another reviewer and added about 1 tsp of garlic powder. I put it on the grill with steaks and it crisped up nicely. The recipe might be a bit much for one loaf of bread. The toppings were pour off the edge. Next time I will cut back the butter in half and use only 1 cup of cheese. I think that will fit better on the bread. Tasted great as leftovers too!

Ultimate Twice Baked Potatoes

Barbeque Seitan and Black Bean Burritos

Flavors come together wonderfully. The key is choosing the BBQ sauce you love since it is the most forward flavor in this recipe. I could have done with less rice, but my boyfriend loved the rice in it. The seiten offered a nice texture, but could easily be omited from this delicious recipe to reduce the cost, but not the flavor.

Whole Wheat Beer Bread

This is a great whole wheat beer bread recipe! I made no changes to the recipe, I used Miller Lite. I also made a honey butter (equal parts honey and butter in a blender until combined) to spread on the bread. I will definitely make this very simple recipe again.

Beef Stroganoff III

I have made this no less than 50 times. It is the easiest recipe. I make it just like the recipe says. I choose to use dijon mustard and vermouth for the white wine and I always double the sauce ingredients to have extra to pour over the noodles. I just can't say enough good about it!
