White Chocolate Macadamia Nut Cookies III

These were delicious! I used 3/4 cups organic butter and 1/4 cup shortening, and I used 1 tsp vanilla extract and no almond. These didn't spread, but they weren't cakey at all. They were sweet, delicious, thick, and moist. I baked them for exactly 10 minutes. The office devoured them!

Burger or Hot Dog Buns

These were pretty tasty, though the crusts on the bottom were slightly hard. We ate these with brats, but they'd be great for burgers because they wouldn't get soggy. Overall, the taste was good. I did use bread flour instead of all-purpose, and that made the inside texture very fluffy.

Baked Chicken Nuggets

This recipe was great, and I've already made it twice this week! I love how easy it is. The only substitution I made was that I used buttermilk instead of butter to coat the chicken. I served with "Ranch Dressing II" as a dip, and it was a hit!

Baked Haddock

This was exceptional. We used fresh, wild-caught haddock from Whole Foods as well as their freshly grated Parmesan cheese. Placing the fish on the top rack of the oven is essential, as it nicely crisps the breading. However, because the oven is so hot and mine cooks food quickly, we used a meat thermometer and cooked only until the fish was at 165 degrees, which only took 8 minutes.

Parmesan Herb Chicken

This was a very good chicken recipe. The use of fresh parsley definitely made this recipe stellar, as well as using freshly grated parmesean cheese (instead of the pre-grated Kraft stuff). My only complaint was that the Parmesean mixture made WAY too much, so it felt like such a waste of ingredients that I no longer had any use for (and they couldn't be saved, since they had raw chicken dipped in them). Like other readers, I used an egg white instead of the butter/margarine to coat the chicken.

Sage Pork Chops

The taste of these was good, but the recommended cook time for these was WAY to high and left me with tough, overly cooked pork chops. I will try the rub again, though.

Ranch Dressing II

This recipe was incredible. I substituted the sour cream for buttermilk, and it was delicious. It was still thick enough to dip vegetables in, and I think it would also work as a salad dressing.

Simple Whole Wheat Bread

This was very good bread. I had to bake it a bit longer to get it to bake through completely, but it was fluffy, and the flavor was great. I followed the recipe exactly. My boyfriend likes white bread better than wheat, and substituting more bread flour for the wheat flour also tasted delicious.
