The whoopie pies turned out great, nice and fluffy texture, but next time I think I'll add a bit more pumpkin and spice, I just wanted it to taste a little more pumpkin pie-ish. Also, I should have followed my instincts and just used butter in the filling instead of the shortening since I find the texture off putting and I found myself needing to add way more sugar and vanilla as well as some cinnamon that I felt was missing in the cake. Overall, great starter recipe to make adjustments to, but I'm glad I made a trial batch before Thanksgiving, I'm sure my co-workers will be happy with this tomorrow!
