Red-Skinned Garlic Mashed Potatoes

Reviewed: Dec. 31, 2004
Very good recipe, adding the bouillon to the water adds so much flavor. I used miced roasted garlic from a jar instead of roasting my own since I never have much luck at it. Has been added to my cookbook, thanks.

Grilled Salmon I

Reviewed: Dec. 31, 2004
My husband and I have made this recipe several times, and everyone raves about it. They always tell us that they can no longer eat salmon any other way without comparing it back to this recipe. One thing though, we don't grill ours my husband smokes it. Thanks so much for this recipe a definite keeper and a must try.

Italian Creme Layer Cake

Reviewed: Dec. 31, 2004
Didn't care for this cake, not someting I will make again. The frosting on the other hand was excellent, will never buy store bought cream cheese frosting again. Was worth making just to get that.

Salisbury Steak

Reviewed: Apr. 12, 2004
I gave this 3 stars for the original recipe, but 5 for the alterations suggested by others. I switched it up a bit as well. I couldn't find Lipton onion soup mix, so instead I used Lipton Onion Mushroom soup & dip mix. I used half an envelope to the meat mixture as well as 1/3 cup Italian-style breadcrumbs, 2 Tbsp. of the canned french onion soup, 1 tsp. worcestershire sauce, 1/4 tsp. dry mustard, and the original 1/8 tsp. ground black pepper, I also omitted the salt. I only used 1 lb. of ground beef, which made 4 patties. For the gravy, I used the rest of the soup, the rest of the first envelope plus the other in the box of the Onion Mushroom soup & dip mix, 1 1/4 cup of water, 1 Tbsp. ketchup, 1 Tbsp. worcestershire sauce, 1/2 tsp. dry mustard, and 1 small can of sliced mushrooms, drained. The gravy turned out the right thickness so I never had to add flour or cornstarch. My Husband loved this and said it was better than any he has ever had. Thanks for the suggestions.

Mom's Baked Beans I

Reviewed: Mar. 13, 2003
These were so good, I used Cattlemen's sweet & spicy BBQ sauce and it gave them a real good flavor. I couldn't wait to pull them out of the oven and get started eating, they smelled so good. I can't wait to make them again, maybe i'll go right now, thanks.

Slow Cooker Kielbasa and Beer

Reviewed: Mar. 13, 2003
Everyone in my family loved this. I love cooking with beer, but my Mother-in-Law hates the smell of it and the taste of it, but she didn't even know it was in the recipe and commented on how wonderful it smelled. She even asked for a copy of recipe. I did however keep a watch on it and stired it every once in a while to keep it from scorching. Thanks

Campfire Potatoes

Reviewed: Mar. 13, 2003
I thought this recipe was lacking in flavor, I added more cheese than called for as someone suggested but it didn't help much. It smelled really good while it was on the grill, but it's flavor just didn't match. I don't think I will be making this again unless I doctor it up a bit, however the concept on the grill was really a neat approach.

Cajun Chicken Pasta

Reviewed: Mar. 13, 2003
This was a great recipe, my Mother-in-Law even said that it tasted just like her favorite dish at a local resturant here in La. I'm sure I will be making it a lot from now on, thanks.

Orange Chicken Stir Fry

Reviewed: Mar. 13, 2003
Everyone in my family thought this was way too salty. And I love salt, but it had way too much. I will try it again some time, because I think with less salt it could be a very good dish. Thanks any way.
