Wavy Lasagna with Meat Sauce, Fresh Ricotta and Spinach

Absolutely loved this lasagna and will be making it again for sure! The Barilla meat sauce was good, there wasn't a lot of meat in the sauce but it would be easy enough to add your own if you wanted to. I did feel like you needed 2 jars of sauce though, one wasn't enough, so be prepared. Loved the use of the fresh mozzarella, thinly sliced, and I used fresh spinach instead of frozen because that's what I had on hand. Everyone had seconds and my son even said this was the best lasagna I have made! Thanks Barilla!

Whole Grain Spaghetti with Cherry Tomatoes, Marinated Chicken Breast and Pesto

This was just okay. As is, I felt like it was missing something. Added more salt and extra pesto sauce to the dish and shredded parmesan cheese helped, but still rather disappointed. Love Barilla pasta, but this recipe needs a little work.

Sweet and Spicy Salmon with Grapefruit Salsa

The entire family loved this recipe! The rub was wonderful, we will be using that on fish again in the future as well as poultry, and we didn't find it too hot. Again, if you are concerned with how spicy it may be, just reduce the amount of the cayenne. Instead of the grapefruit salsa, I made a mango/pineapple/canteloupe salsa, and it was nice and refreshing paired with the salmon. I would definitely make this again.

Pork Carnitas with Cilantro Tomatillo Sauce

Made this with a pork tenderloin in the slow cooker and it was delicious! There was a nice amount of heat, but the cilantro tomatillo sauce offset that a bit. I made it with the corn tortillas, but we thought it would have been better with flour tortillas instead. We will definitely be making this again!

Hash Brown Casserole II

Such an indulgent treat to have cheesy hash-brown casserole. My family loves this recipe but we only have it around the holidays. I made this recipe as is with the exception of subbing the Rosemary Saltine crackers for corn flakes. You definitely need a crunchy topping to break up the richness.

Amazing Muffin Cups

Quick and easy for breakfast. You can use a variety of leftovers, whether its veggies or cheeses, and just toss them into the muffin tins for a versatile breakfast. Make sure to use non-stick muffin tins though, I used Pam and it was still difficult to get the muffin cups out of the tins.

Grilled Steak and Asian Noodle Salad

We liked this recipe but it was on the sweeter side. I think the next time I make this we'll use some chili's to add some heat to offset the sweetness. Also added some mushrooms and broccoli so there were extra veggies for my son the vegetarian, and just omitted the steak for his dinner.

Three Bean Salad

We really enjoyed this salad and it was so easy to make! I wasn't able to find the Goya Salad & Vegetable seasoning, so I substituted the Cilantro & Tomato seasoning packets instead. Even with the slight change it was delicious!

Roast Adobo Pork Loin

Just made this for dinner and it was delicious! I can't believe that something that was so easy to put together, and took very little time to cook, could turn out so tasty! The rub formed a nice crust on the pork loin and the flavor just permeates the meat. We will be making this again in the future, a big hit in our house!

Grilled Steak and Fresh Mozzarella Flatbread

We really enjoyed this recipe. It took very little time together and grill, so it makes for a quick and easy weeknight meal when your short on time. I found the addition of the balsamic vinegar added a nice sweetness to the steak, off setting the lemon-pepper seasoning slightly. Like another reviewer mentioned, the addition of the balsamic does wilt the lettuce a bit and turns the mozz brown, but I waited until the steak was done before I dressed the baby spinach. The heat of the steak and naan also caused the spinach to wilt, but no-one in our house minded at all. Will definately make this again!

JELL-O Patriotic Mini Fruit Tarts

I made these mini fruit tarts using mini phyllo shells and I used the fresh fruit I had in the house which was kiwi, blackberries and peaches. They were a nice and light treat after dinner, especially with the warm weather.

Chicken Marsala from Birds Eye®

Made this dish for the first time using Birds Eye Recipe Ready Mushroom Blend instead of the Marsala Blend. I'm not a fan of onions and the Marsala blend is loaded with them, but the Mushroom blend had a nice assortment of mushrooms all in one package. The recipe for the Chicken Marsala is really basic and I found that the dish really needed seasoning, especially salt and pepper, but with some minor tweaks it was a quick and easy meal. I'd try this again for those nights where I don't have time to put together a large dinner.

Teriyaki Pineapple Turkey Burgers from DOLE®

I made this burger using a 90/10 ground beef since I was out of ground turkey. It was good, but I was hoping for more of the teriyaki flavor to come through in the burger. The consistency was nice though and sort of light because of the panko bread crumbs. I also used freshly sliced pineapple, but I didn't grill it (no time), and it was really yummy on the burger. Grilling the pineapple would have probably cut down on the amount of juice so it wouldn't have made the bun soggy. Will make this again with some additional changes.

Asian Inspired Grilled Asparagus

I'm not a big asparagus fan, but this was really good! I did make a few changes, like using Teriyaki Sauce instead of Soy Sauce and I added about a teaspoon of lemon juice and a pinch or two of brown sugar. The sauce carmelized on the asparagus and we all finished off a whole batch of asparagus! Will make again!

Grilled Corn with Cilantro Lime Butter

This was delicious but it did need some salt and pepper. The corn was nice and sweet but with the addition of the lime juice and cayenne gave it a bit of heat and tartness that just worked really well with the sweet corn. Will definately make this again!

Herdez Cream of Guajillo Chile, Corn and Chicken Soup

This soup was delicious! Some slight heat, but not overpowering at all. The chicken just falls apart while cooking and while I just added corn to the soup, you can add any other vegetable you want. Very versatile and will definitely be making this again, couldn't keep it in the house long enough!

Easy Creamy Bell Pepper Marinara

I normally make a meat sauce but when I saw this quick and easy recipe I figured I would give it a shot and I'm so glad I did. I was surprised at the amount of flavor the sauce had and how nice and thick it turned out. It's a great way to use up some of those ingredients I always seem to have on hand!

Citrusy Chicken and Broccoli

Delicious dinner! Really easy to make and with the addition of sliced portabello mushrooms and sugar snap peas, along with the broccoli, it made for a yummy veggie filled stir fry. I wasn't able to find guava nectar in my local grocery store, so I used 1/3 C. of freshly squeezed orange juice and it made for delicious sauce. I was hoping for leftovers but the boys ate every single bite so it was a big hit in our house. Will definately make this again.
