About this Cook
Married with 3 children. 17yr old, 16yr old, and 7yr old. I like to cook, but I have issues with cooking for my family. My husband is VERY particular about food- doesn't like tomatoes, bell peppers, cucumbers, only likes a few spices etc. He loves Italian food (he's an Italian from New York) and I really like asian food (I'm half Japanese)

Barbecue Beef for Sandwiches
I used everything except the cayenne pepper and it turned out WONDERFUL!!! I added a little bit of water to the bottom of the roasting pan & had to cook it longer then recommended (4 1/2 hrs) but I think it was because I didn't have a lid to my roasting pan and had to cover it with tin foil and I didn't have the edges completely sealed (after 3 1/2 hrs I realized this and after making sure edges were secured, it was done in about an hour.) Will definetely make this again, shredded meat would be good without the sauce to make tacos,enchiladas, etc.

Fresh Spinach Salad
I added some things to the salad part, and used 2 tbs. granulated onions instead of regular onions for the dressing, I also used only 2 tbs of Splenda instead of 1/2 cup of sugar. Turned out great! The dressing is soooooo yummy- this is my new favorite salad dressing! Even my EXTREMLY picky husband liked it. Next time I think I'll try the dressing with some Vidalia (sp?) sweet onions.

Quick Chicken Divan
I changed a few things, I used 2 cans of the cream of chicken soup (my husband doesn't care for cream of mushroom), I shredded the chicken breast instead of chopped, added 1/4 cup milk ,divided the cheese and added a layer on top of the chicken, a touch of garlic powder, crushed croutons drizzled with butter as a topping and served it on top of egg noodles. I turned out great!! Very easy to make and both my husband and 4 yr old loved it. I will definitely be making this again, next time I think I'll try it with a touch of curry powder, it sounds yummy!
