Tasty Lentil Tacos

we used lettuce leaves for shells, and subbed vegan broth, and daiya shredded cheese, and vegan sour cream. I also used red bell peppers in place of half of the onions. We topped it with raw bell pepper, tomato, cilantro, red onion, and cucumbers. It was delicious! We didn't have any salsa, so I didn't add that in, but the end result was phenomenal.

Deep Fried Mushrooms

this was very good. I am allergic to wheat, so I used sorghum flour instead. I also used egg replacer instead of real egg. I do think it needs a lot more flavor. Next time I will add all kinds of herbs to it, and more garlic.

Split Pea Soup without Pork

Yummmm. I used a whole onion in the recipe, and doubled the celery it called for. I also soaked the peas over night, and only needed to cook it for about an hour. It came out nice and thick. At one point I needed to add some extra water, because it was starting to burn. I added some smoked sea salt to mimic the smokey meaty flavor. I will definitely use this recipe again. As a vegetarian, finding a good pea soup with no meat in it is a challenge. I will make mine home made from now on.

Vegetarian Meatloaf with Vegetables

ok, so its still in the oven, but I couldn't resist taking a tiny bite. SO delicious! I used two packages of veggie crumbles, and used regular bread crumbs. I found a recipe for home made vegan worchesershire sauce, and used that. I put catsup in the meatloaf itself, instead of on top(thats how my mom used to make it). I ended up using a little more "worchestershire sauce" than the recipe called for, but I cut back on the salt in it, so the flavor is amazing. I didn't have any carrots, so I am only roasting potatoes along side it. I can't wait til dinner!

Oatmeal Chip Cookies

these cookies are delicious, however, after being stored in zip lock baggies overnight they became hard as rocks. Microwaving them for 10 seconds solved that though. This recipe really does deserve 5 stars, aside from the hardness.

Black Bean and Salsa Soup

this soup is now going to be a staple in my house. My partner and I both loved it! So easy to make, and soooo delicious. We added a dollop of guacamole with the sour cream. We didn't have any green onion, so we omitted that. Perfect east meal for a cold night. We ate the 4 servings between us in one sitting, so double the recipe if you are actually cooking for 4 people. This is fantastic with corn bread!

Potato Leek Soup III

this is delicious. I used coconut milk in a can, and veggie broth, to keep it vegan. At the end, I added dill dip mix to add some more pop! SOooo good!

Vegan Potatoes au Gratin

this was very rich, and gave me heart burn, but I kept going back for more. SO yummy! I even fed some to a non vegan friend, and she wanted seconds. Ill definitely be making this one over and over again!

Vegan Fava Bean Salad

I used cannelini beans, for a lack of fava beans, and I also cut the onion by half, because my onion was HUGE! I used de seeded regular tomatoes, because I was out of romas, as well. I added a tiny bit of salt, to help bring out some of the flavors. I think the dressing compliments the beans and the veggies quite nicely. I subbed agave for the maple syrup as well. I used half of a giant cucumber, and next time will use the whole thing. I am eating this as we speak, before even letting it sit, because it is that good. I can't wait to have this at lunch break tonight!

Tropical Coconut Black Bean Soup

I was leery, because I don't usually like coconut based soups. I love coconut in my food in general, just not in soup. I added jerk seasoning, and a few shakes of cumin, and a dash of chili powder. It was bland until I did that. Now it is perfect! I pureed everything with my immersion blender. I wish that I had left more chunks, and saved the peas until after. I would also reccomend a tiny bit less peas. They are a little over powering. Over all this is a fantastic recipe.

Simple Whole Wheat Bread

this bread recipe does not need my review. It stands alone in a sea of bread recipes. I used agave nectar, since I don't really get along well with honey, and added cinnamon and raisins to one loaf. The cinnamon raisin loaf didn't rise as much as the other two did, but it still looks remarkable! I will never buy store bought bread again.
