Pesto Cream Sauce
I made this tonight and it was amazing! Adjustments I made. I used 1 cup of whole cream and 1 cup of milk. The texture was very smooth and creamy. Once you add the cheese I cooked 5 minutes to get from the chunky cheese phase to creamy... it came out perfect.. I made no other changes. Everybody loved this recipe which is somewhat rare!! For the Pesto sauce I used 3 cups of basil, one cup of olive oil 1 cup of pine nuts, 4 cloves of garlic and salt and pepper to taste. This was an amazing dish, a 5 for sure!

Mint Crusted Rack of Lamb
I made this about a month ago, and I'm making it again today. This was a wonderful recipe! I had to cook the lamb for an additional 15 minutes for medium rare. I would not skip the vinaigrette, it makes this recipe fantastic!

Pesto Chicken
I made this last night and it was excellent! I followed another readers advise and roasted red peppers, onions, and garlic. I pounded out the chicken and marinated it for two hours. I then placed the proscuttio inside the chicken with feta cheese and the roasted peppers. I tied it up and put 2 tablespoons on the top of each chicken roll. I served it with Angel Hair Pasta. Everyone loved it, Thanks for sharing!
