Mom's Turkey Sausage Patties

Reviewed: Jan. 1, 2014
This was excellent. Tasted just like sausage without the nitrates & fat. I did what others suggested and doubled the ginger & salt & nearly doubled the cayenne. Hubby not a big fan of sage so left that alone. No reason to buy sausage when this is SO good. Thank you Ms. A. This will be delicious on breakfast sandwiches or with pancakes.

Creamy Au Gratin Potatoes

Reviewed: Dec. 29, 2013
Update: After my initial review I reread the recipe and realized I'd changed the ingredients per the reviews. NOT the recipes fault that it didn't turn out as expected. Since then I watched the video & will try it again using regular yellow cheddar. We might like that better. Plus I used 1 1/2 recipe of the sauce. Probably because someone said it didn't have enough sauce. The reheated leftovers tasted better than the day I made the dish but I still want to prepare according to the directions given. I'm sure that will elevate it to 5 stars.

Pumpkin Soup

Reviewed: Nov. 8, 2013
I usually have very good luck with recipes here but not this time. I made only 1/2 the recipe to see if we liked it. Not sure what I did wrong. All the reviews were great but hubby & I did not care for it. So sorry but this just was not to our liking.

Smoky Grilled Pork Chops

Reviewed: Jun. 19, 2013
I made this exactly as directed: As some other reviewers said..my rub didn't stay on the meat. I massaged into one side, turned over and did the other side and when I turned them back over or picked them up to put on the grill, the rub was staying on the bottom of the dish. The thick loin chops were still good & moist but didn't have seasoned flavor I thought it would have with that much garlic, paprika, etc. Next time I'll try marinating in the wet ingredients for a long time then sprinkle on the dry ingredients to see if that helps. I don't want to give up on this.

Szechwan Shrimp

Reviewed: Apr. 20, 2013
I tripled the sauce as others suggested because I made rice & topped with a bag of microwaved frozen stir fry veggies then the shrimp with sauce. The recipe was easy, spicy and delicious. You can add broccoli & carrots, or snow peas or scallops as you wish and it would be delicious wih any of those. My hubby loved it and we will be making it again.

Ham Bone Soup

Reviewed: Apr. 16, 2013
I got a late start & didn't have time to do in the crockpot. Worked fine on the stove. I used a ham hock which is what I had on hand. I meant to use chicken broth as reviews said but forgot to buy it so I used the water & chicken bouillon cubes. I added thin sliced carrots, celery, garlic 2 bay leaves & a couple shakes of red pepper flakes + 2 tsp. of sugar as suggested by other reviews. I sauted the onion, carrots, celery & garlic a little in the pot with the canned tomatoes then added all but the potatoes and brought to a boil. I used 2 cups of diced ham I had in the freezer to use up. I simmered it for 1 hour then added the cubed potatoes and brought to a boil again. Since it had cooked down some I added a can of veggie broth I had in the cabinet & gently boiled for 1/2 hour then turned off & let sit till dinner time. Hubby loved it & it was SO easy to throw together.

Quick and Easy Chicken Noodle Soup

Reviewed: Mar. 29, 2013
Made this last night. Followed suggestions by Brown Sugar Girl. Increased the veggies to 1C each, added 2 minced garlic cloves, increased the amount of noodles to 3 cups but cooked them separately and added to each bowl when serving. Added a couple pinches of thyme. I also cut 2 thighes into bite size pieces and browned a little with the veggies then added the broths & continued witht the recipe. Saved cooking the chicken in a separate pot and it finished cooking in the broth. The soup was DELICIOUS. I will definitely make it again. Thank you Maryvm for a great & easy soup.

Fried Rice Restaurant Style

Reviewed: Feb. 26, 2013
I was disappointed. Not near as good as restaurant. My rice was mushy even though I followed suggestions to rinse rice first. I also made it the day before so it would be cold. It was still a sticky HUGE lump. I used regular white rice. Should I have used Basmati or Jasmine? Would that have made a difference? As "zobird" said I used 2C dry rice & it made a LOT. I didn't use it all and still we had a big container of fried rice left over. I agreed with others that it didn't have much taste and I had to add a LOT of soy sauce & Sesame oil & still bland. I love fried rice so will be willing to try this again. So many good reviews I have to wonder if I did something wrong but don't know what?? I'll try rinsing the rice more next time & lightly browning it before adding cooking liquid. I'll add onion & garlic with the peas & carrots. Along with all the steps for making the Sweet n Sour Chicken it was a labor intensive meal that was just ok.

Creamy Mustard and Tarragon Chicken

Reviewed: Feb. 20, 2013
I must have done something wrong. I reread the other reviews and everyone else loved it. My chicken was nice and crispy until I put it back in the sauce to finish cooking then became all soft. My sauce was thick enough, not much of it though. The problem may have been I made it early & then just reheated when hubby was ready to eat. If I try it again I'd just fry the chicken completely then make the sauce to put over it. Not sure I'll try again though. My hubby prefers the Honey Lime Chicken on this site and compares all other chicken recipes to that one.

Outrageous Warm Chicken Nacho Dip

Reviewed: Feb. 4, 2013
This was very good. I only found Rotel Tomatoes in a 10 oz. can so that's what I used. I used 1/2 lb. Velveeta 2% and 1/2 lb. Sharp Cheddar as another review suggested and I used the entire can of Black Beans rinsed and drained. Another reviewer suggested to save the drained tomato juice to thin out a little if needed and I did use some of it. My husband said "It's a keeper". We used it as a meal with salad so it served 4 rather than 12. I will make this again. I think it would also be good with either sausage or ground meat.

My-Hop Pancakes

Reviewed: Jan. 16, 2013
Made pancakes exactly as written and they turned out very tasty. Will probably be the recipe I use from now on. My only problem was cooking them in a teflon electric skillet. It had a raised center and the batter ran down off the center so they were not formed as pretty as they should have been but they tasted great. Next time I'll do them in a heavy skillet on the stove. Using a 1/3 measuring cup I got 7 medium size cakes and a small one. Enough for a quick dinner for hubby and me.

Slow-Cooker Pepper Steak

Reviewed: Jun. 25, 2012
Very tasty. I will make again. It was a little time consuming to brown the meat before putting in the crockpot but once in, it made dinner prep easy that evening. I did as others suggested and doubled the sauce ingredients for additional gravy. I tried it over brown rice and Angel Hair Pasta (all I had). We preferred the pasta so next time I'll get egg noodles. I used 3 cups beef broth (double recipe) with 2T cornstarch rather than the bouillon as suggested and doubled all gravy ingredients + added 1/2 t. of cayene pepper. At the end I thickened it again with 2T cornstarch in cool water as others suggested. Hubby & daughter liked it.

Will probably make again after following advice of other reviewers. Put cubed chicken in c-pot with a little onion + 2 pressed garlic cloves. Mixed 1/2 C sherry with 2T melted butter & 1/2 pkt. Italian Seasoning mix. Cook on low for 5 hours. Add Sauted onion, garlic & some baby bellas, the soup, 1/2 container of Savory Garlic Cooking Cream (Philadelphia Brand) and some peas & stir into chicken. Cook another 1/2 hour. Served over Egg Noodles.

Sarah's Rice Pilaf

Reviewed: Jun. 17, 2012
Absolutely DELICIOUS. I'll never buy boxed rice dishes again. Thank you for such a wonderful and easy recipe. I cooked mostly as written. Only added about 4 pressed garlic cloves. We LOVE garlic. Since I served it with Chef John's Pork Tenderloin Diablo (also delicious & easy) I used a can of beef broth rather than chicken. Next time I'll add a little parsley for color. For other variations I'll add steamed finely chopped broccoli or carrot. What a delicious side dish. Can't wait to make it for company!!

Pork Tenderloin Diablo

Reviewed: Jun. 17, 2012
WOW. Thank you Chef John. Dinner fit for company along with Sarah's Rice Pilaf and fresh green beans. Made exactly as written but my roast came packaged 24 oz. so I had to bake an extra 20 minutes. It came out PERFECT. Will make this often.

Lemon Freeze Pie

Reviewed: Jun. 12, 2012
We liked the desert. I left out the fruit cocktail. The only thing to remember is to take it out of the freezer WAY before you need to serve it. I bent several utensils trying to cut it and get it out of the dish. 15-20 minutes was still not enough to cut it easily. I will probably make it again. It's cool and refreshing. Note: 2 packets of the Honey Grahams was enough crushed for a 9x13 dish and the 1/3 cup for the topping.

Campbell's® Slow-Cooked Pulled Pork Sandwiches

Reviewed: May 14, 2012
I made this with a 4.6 lb. pork shoulder roast and cooked on low for nearly 9 hours. It was very tender. The sauce was thin though and not really a pork barbecue but then it never said it was. The sauce was fatty too even though I browned my meat first. I did as others suggested and refrigerated overnight in the juice. The next day I threw away the juice and added a bottle of Sweet Baby Ray and 1/2 bottle of Open Pit Original to reheat the shredded meat. It was very good and easy so I will definitely make it again.

Orzo and Tomato Salad with Feta Cheese

Reviewed: Apr. 3, 2012
Very good. Even better the second day. Adjusted per reviews. I used black olives with the feta and dried herbs since I didn't have fresh. Added pressed garlic cloves and balsamic vinegar per other reviews and increased the EVOO. Since I halved the recipe for my hubby and myself I used the 1/4 cup EVOO for 3 servings. The left over serving was even better the following day so I'll make it the night before from now on.

Omelet in a Mug

Reviewed: Mar. 24, 2012
Made this for my hubby this morning before he went fishing. Quick, no fuss meal that he loved. Sprayed a cereal bowl with PAM, fork scrambled 2 eggs with 1t water. Microwaved for 1 min. then added 2T shredded Mex. cheese + 1 cooked, crumbled bacon strip we had in the fridge & microwaved for 1 more minute. Wraped it in a whole wheat tortilla and he was out the door!! I always cook an entire lb. of bacon, put 4 strips per sandwich bag, put all baggies in a zip lock and freeze. Then you always have cooked bacon for recipes like this. Hope this helps

Baked Chicken Nuggets

Reviewed: Jan. 17, 2012
These were good but I was disappointed in the color. Mine didn't brown nice as shown in the picture. I used Panko rather than Italian Seasoned Bread Crumbs as that's what I had. Would that have made the difference? I did use the suggestion to marinate the chicken in 1/2T vinegar and 1/2C milk for an hour before baking. They were very tender just not as pretty & crispy looking. UPDATE: I just reread the recipe & maybe I should have still dipped them in the melted butter after removing them from the marinade. I skipped that step because they were already wet. That might have made them brown better. Will try that next time.
